Tommy’s Pizza (Columbus) secrets and cloning tips, Part 1

3:20: Picture of a pizza I ate at Tommy’s about 10 years ago, with half cheese, half pepperoni.

5:17: “Pizza in Columbus is a lot different than pizza in Pittsburgh.“ As far as I know, pizza from Pittsburgh and east of Pittsburgh is basically New York style. Something changed between the arrival of pizza in Pittsburgh and the arrival of pizza in Columbus. The westward trek of pizza didn’t happen south of here or north of here. Pizza’s original journey west went through Ohio.
7:02: “ I think pizza became popular in Columbus at the same time that electric sheeters became available.“
8:24: “Late 2010 is when I first got involved with pizzamaking.com.”
9:49: Pictures of Upper Arlington Tommy’s sign and exterior.

I have a lot to add here. Sorry I haven’t done it yet, but it has taken a lot of energy to create what’s already here, and it’s gonna take me a minute to say everything I need to say here. Check back if you’re looking for a detailed recipe.
Where it says “This is the flour you want,” it was supposed to show a picture of the bag of flour I used elsewhere in the video. I don’t know why that picture disappeared, but it used to be there as a cutaway.

Enjoyed the video, and it really brought back a flood of memories! I worked at the Tommy’s on Lane and Neil back in 2000 and 2001. Game days were absolutely nuts at that location. We had to have someone at the front door to refuse entrance to the building. Loved every minute working there in my early 20’s. I’m now a kitchen manager for a chain located out of Cincinnati and have brought my knowledge and experience from Tommy’s and other pizza shops to help get our kitchen back on track! Again I def appreciate the video and the memories you helped stir up.

Thanks. I’ve been there on gameday. It’s been a long time, but I know what you’re talking about. I think I remember walking down the stairs and seeing a few racks full of skins for the afternoon. That was probably before I ever thought about how a place like that operates.

Can confirm, current employee at the Neil/Lane location and in the later half of game season rn. Foot traffic has slowed down just a bit thanks to covid restrictions at the stadium, but we’re still completely packed on home game Saturdays. Not to mention all the orders coming through Doordash during away games. Having a competent team who knows their individual stations like the back of their hands (not to mention the sheer amount of prep work by the managers) helps everything run at least semi smoothly lol.

Also, my cousins from Dayton came over yesterday; brought some Cassano’s. With most of my relatives being in and around Dayton, I’ve always liked Cassano’s, but that was the first time I’ve had it since probably 2010, after walking to Dayton from the Pacific Ocean. Would like to have a couple more of them, to analyze and enjoy. I’ve always thought of Cassano’s as noticeably different from what you get in Columbus, but I didn’t yesterday; except for a couple things, like the hint of salt on the bottom of the crust and an herb in the sauce that I couldn’t identify. Seemed most similar to Flyer’s, but better/thinner. (Flyer’s has kick-ass customer service, though.)

Terrible pizza and even if you like it… they’re hardly ever open. We should stop buying the product and help them go out of business…..
