I thought the reason they say to use in one direction is that if you use it in reverse the area around the stem and the gland is always under pressure and it could then leak even when turned off. Installed the right way around the gland is not under pressure so even if the stem is worn and the gland loose, it won't leak.

I think it's for if the fire brigade taps into the mains in the street the water from your house can't back flow into the mains and potentially contaminate.
