Americans eat FRENCH fries (cooked and served the way the French do it) because they learned about them in France (which is where most the soldiers were in WWII, also where are the USA expats had been living prior to WWII).

French in french fries refers to the cooking term, not the country. That's why it's written with a lower case "f". So saying french fries doesn't refer that they're French. And even if the origin is France, Belgians have mastered how to make the best fries.

I had Belgian waffles (with whipped cream and vine-ripened strawberries) at the Seattle World's Fair. I was 10 years old and to this day, 50 years later, I can still remember every detail of how they looked and tasted. Divine!

I'm not dissing your memories, but the Seattle world Fair was almost 60 years ago. 10 years later, it still would of been a big thing in Seattle history and speak (of the day), so maybe as a ten year old this became an infused memory of some wonderful waffles whilst your parents (or grandparents) were talking about the 1962 World Expo in Seattle. Then again, maybe you meant to type 60 years instead of 50 years and all my comment was just waffle!!!! Either way, great memory Christine.

I just discovered this video tonight....I'm from America and I would love to go and visit Antwerp!!!! It's absolutely stunning!!! It's not just about the bakeries and all the delicious food which I'm drooling over! It's about the beautiful architecture and the views of the sea and everywhere you look it's just amazing absolutely stunningly beautiful! Belgium is the most underrated country in all of Europe. It took me ages to explore it, and now I'm hooked...and if u speak a few sentences of French or Dutch, the Belgians go out of their way to be hospitable to any tourist. Try it - it' s a must P.S. my favourites are Brussels, Oostende and Liège ( Leuk)

@@i.rankin6711 Brugge to me is the touristy version of a medieval town. Ghent has less of the touristy feel but still all the medieval elements. I love walking through the center of the town. There are the three towers, the castle, the canals. It is all very old and beautiful.

What an emotional ride! I was born and bred in Antwerp, a genuine Sinjoor, but a little over 8 years ago I emigrated. This goes right to my heart. Those locations and places I walked around on a daily basis. .... got a lump in my throat ... and yes, 'our' Belgian fries finally got recognized.

@@cookiefavors Hi Irina, this specific pastry is called an 'alcazar'. It's a Spanish word for fortress. So this pastry dates back to the 16th century when the low countries (nowadays Belgium and Holland) were under Spanish rule. The pastry looks like a fortress, hence probably the name. This specific old bakery uses pineapple because that must have been an extremely strange fruit for us back then. So just to keep up the tradition. But I think you could also make it with any other fruit you like. It's basically frangipane with a fruit. Just Google alcazar + cake or alcazar + gebakje and look at the pics and recipes that will appear. Have fun.

Actually what he says about the 'frieten' isn't extremely accurate XD He didn't get French fries, those are much smaller; those soggy McD stuff, that's French fries; what he got were Flemish flies, which are typically much thicker. If I eat fries, I always take Flemish, nice crunchy, full of flavor.... once you had that, you'd never want to go back to that bag of misery that McD calls French fries XD Ironically we here in the Netherlands have sauce for the fries called 'American sauce' that isn't American at all, rather Dutch. But the first company to come with that is McD, hence the name American sauce. Also very unique to the Netherlands. McD doesn't have American sauce in America XD

I live in Antwerp now for about 20 years and was born here. Seeing your documentary made me realize that there are hidden gems still to be discovered. Bakeries I just walk past. You missed however bakery Lints. It's a bit outside of the centre but at a beautiful place and they make fantastic pastries. I also congratulate you for having captured real Antwerp chauvinism in action. Kudos!

Dear, oh dear, oh dear!! Having lived n Belgium for many years, I can attest to the fact that there is no place in the world with food as good as there is in Brussels and Antwerp (and I say that as someone who lives in France now, no less). I can't believe that Paul has never visited before. The grub in Flanders is way out there - better than in France. Brussels also has an utter ton of brilliant eateries. The secret? Simple.. Under Belgian law, you are not allowed to open a restaurant without at least one of the owners being a qualified chef. The result is that over the many years I lived there and ate out ALL the time, I NEVER - and I mean "never" had a bad or even mediocre meal - even in the simplest of cafes. Go and enjoy!!

My parents while living in The Netherlands used to eat in Belgium (mostly in Antwerpen) at least once per week. The reason being that in Belgium the culinary level was way ahead of the Dutch and even better than the renown French kitchen. Meanwhile things have changed, but if they could, they still would eat in Belgium. Belgians? Very kind people, great country and an amazing high level of restaurants, beer and food.

As a Belgian I like this video so much! Stepping away from 'tourist traps' like you see in other video's on KZbin. Johan Segers is one of my favorite chefs too. He keeps the dishes traditional and simple but always adds an extra touch to his recipes. Hats off to you for your research and review on true Belgian cuisine!

I went to Holland on business, from England, and on our return we were running late and had no chance for a meal. As we were marching through Schiphol Airport I noticed a business called Brot, ordered two sausage rolls just to fill a gap but what a surprise! They were the best snack food I have ever tasted! So much so that seven years later I would fly to Schiphol just to have another one, yes, the wife would think I am nuts but there again she thinks that anyway!

All that pastry and bread looks really good! Mmm mm mmm!! Here in the US, most of our bakeries just have items that are overly sweet. The pastries and breads shown here look just right.

Couldn't agree more! Been to the US five times for four to eight weeks, cities, countryside, east, west, and tried a lot. With a few exceptions pastry is too salt and too sweet, pushing away the other flavors. Or it is overdone, too much chocolate, too much vanilla taste. In Belgium most bakeries know to bring balance in their pastry, Little bits of everything well combined to have a joyful minute. It's about quality, not size. And the US doesn't have a bread culture, in contrast to Belgium and of course Germany, and a few in the Netherlands.

My heritage goes back to the tribe of Belgae. I am pleased to finally see the country that produces the best beers, the best hand made lace, the best diamonds, the best chocolate, some of the worlds best baked goods like waffles, and the most unusual horses (Clydesdales), and the only country in the world who's national dish IS FRENCH FRIES...we put *mayonnaise on them traditionally- NO VINEGARS, NO KETCHUP-NO GRAVY!! My Grandmother (Boma) was from Brugge, and my Grandfather (Bompa), from Leigge. Belgium is so small, you can bike across it in a day, and it has been nominated the MOST GOTHIC country in the world. Belgium has the MOST castles out of any other country in the world. Thank you for making my 82 year old Mother smile :)..she was born at my Great Aunts farmhouse in 1939 in Ghent.

OK, pardon me but it is Bomma (Boma is a tv-brand of sausage) , the place is Liége (If you talk French) or Luik (If you are Flemish) or Lüttich (There is also a German talking small community ). The size of country might be relatively small but it harbours a huge harbour (you see what I did here? ;-) ) , It produces more than 1500 different kinds of beer , 3 national languages , 6 governements (and many other regulatory institutons) , It has a very important diamond polishing and cutting industry, and there are many very different dialects of Flemish .

@@Dutchbelg3 So sorry. Being proud of your heritage in simplistic terms that others, *NOT Flemish, can wrap their heads around is one thing. Speaking and writing a language, is very different than speaking the language. I wasn't raised speaking, or educated by Flemish people, as you are seeming to assume, as my Father is Italian. I'm not leaving *comments here on KZbin to find a teacher, or to compete with anybody. I'm leaving comments I *know, from what I learned as a child. It is what I know of my family's heritage. Our family crest hangs in our basement, and goes back to the House of Orange...another great topic I'm sure you will respond to (YAWN)... I know one thing for sure, my Boma wouldn't have liked you picking on others, as she had more old fashioned values than anyone else I can bring to mind. My Bompa, was a soldier during WW2. He would have thought anyone who tried to belittle somebody publicly is looking to start a war. I was P.P.C.L.I. over in the middle east from '88-91. People over in Iran get stoned there as punishment, if others do not like their opinions. You Sir, would have been considered MANY things, by the C.A.F. soldiers I served with. It’s annoying if a minor mistake like American soldiers hearing French while eating Belgian fries gets to live a life on its own so an entire grand nation still uses “French fries” .. I am glad, I saw your video clip taken at Antwerp. You are quite right to point out that Belgium is unknown relatively for its very advanced expressions of life. Brewery / food / chocolates/ Bakery and often underrated. Antwerp is fascinating in many aspects “ French fries “ being one of them. I would rather call them “ pomme frite “. In any aspect of manufacturing, art, etc. it is full of details. I feel fortunate not missing out on visiting this great place.

Im Begian. I felt delighted to see the 'rogge verdommeke' the bread with the raisins in it. Its very popular in Belgium, we eat that with just some butter and broth on sundays and all. Felt like home, watching this ^^)

That stew is pretty much our national dish (with double fried fries!). Very easy to make yourself and the Wagyu is absolutely not necessary (and a waste imo). Just use meat from the shoulder/back of the cow. It's tough, so just let it simmer for 3-4 hours until it becomes tender. That's the whole point of a stew.

Showing my age but in the NY Worlds Fair of the 1960's one of the nation's venues (Belgium duh!) served Belgium waffles. God they were good! The whipped cream and fresh berries covered thick. We ate them all day. Many thanks for the superb series Paul.

A friendly comment: In the video you say that during the middle age the Spanish brought in Belgium coffee from South America: this is not possible for the simple reason that coffee being originally from Africa (Ethiopia) was transplanted to South America less than two hundred years ago.

@@joanlynch5271 Aah, this is so relatable. I was watching a show called "yakitate Japan" which was all about bread and bread making, and I was on a low carb diet. I did learn a few things about bread I didn't know before but I also got a strong craving for bread and eventually bought some. Getting some carby items once in a while isn't the end of the world of course, but I like to not be ruled by cravings either so one thing I do that works for me is than when I have a craving for something high carb is that I write the name of the food down in a little notebook I bought specifically for the purpose. That way the craving can leave my head as it's safely on paper. And when I allow myself to have some high carb item and don't know what to make or buy I can open that little notebook to see what I'm in the mood for.

I'm not big on the sweet tooth, so this was actually a little scary!!!! But scary nice. However, I am huge on the savoury so the sausage roles had me absolutely salivating. But that was then trumped by the beef stew which was then trumped by the beef stew with chips!!!! YUMMY.

French fries is rumored to come from the cutting technique not from the language. "Frenching vetgetables" is cutting them in a wide narrow length, like we cut potatoes 😁I love you loved our country. Thank you!

Yes! Neuhaus! Tasted so many of these chocolate pralines. Love them! Espescially the manon. But also, orange zest covered in dark chocolate, absolutely amazing.

I was travel to Antwerp and got lost in the small street. Thirsty and hungry so I went into small cafe, they served me a bowl tomatoes soup, a couple fresh breads and a cup hot cappucino. Oh may, it's soo good I clean it the bowl so fast. 😅

yea, of course friet stoofvlees, that is fries and stew are one of the most popular dishes in belgian, the sauce of the stew is just the perfect companion for fries. In all of our frituren you can order stoofvleessaus or stewsauce on your fries, so actually it is the most natural thing to do.

I find Wagyu Beef a bit too expensive to prepare this "Stoofvlees", we've excellent local beef too. But happy to see that Johan Segers uses "Dubbel Trappist from Westmalle" to prepare it. I use it too.

@@leung9401not at all, on the contrary. It's a real stew made with "not noble" meat out of the neck or shoulder that has to simmer for 2 to 2.30 hours. Cheap in comparison with steak or filet. But you have to use that kind of meat as it's the most tastefull.
