In short Toothy = Bity Polished + slicy for meat cutting I do use an Toothy edge 400-600 grit finished with a 3 micron strop , just slightly stropped though for EDC or camping I do mostly polished Try to cut an empty plastic bottle with toothy and polished, you will love the toothy for it ;) A toothy edge is amazing to cut zip ties aswell cant recommend a toothy edge for wood stuff, it digs itself in way to much and is harder to control

I prefer a toothy edge for all purpose tasks, to me a polished edge is only good for shaving. Trying to cut rope or green branches with a polished edge the blade just skates across, it doesn't "bite" into the object like a toothy edge.
