I was doing a paid tasting at someone's house the other day. I was there when he brought out 8 two inch thick NY strips to put on the grill. My guy turned them I do not know how many times and they were all on for at least 30 min. He never offered me any food while I waited for the guests to finish eating, but I am pretty sure I would have had to politely decline :-)

Wow! This is a great video and reference. I didn't really believe in neck pours until I opened my first bottle of Michter's American. The taste completely transformed after the first pour. I'm still waiting for that to happen to Glenfiddich 14...bottle is 1/4 the way gone though.

I have been doing more research and it turns out there is a lot of confusion about the term neck pour. Some people mean "fresh crack" and believe that a freshly opened bottle needs to "open up" to taste its best. Most people attribute this change to exposure to oxygen which chemically there is no basis for. This theory should likely be referred to as a fresh crack vs neck pour because they are actually saying the entire bottle tastes bad until it has had time to "breath". The other view is that the liquid in the neck tastes bad because of its exposure to the air in the neck. This theory is that you can pour a bit out and it is bad, but take a second pour even seconds after, and it is good. There is also no chemical basis for this theory either. The terms get used interchangeably and actually mean the opposite. One says exposure to oxygen makes it bad and the other says exposure to oxygen is required for it to taste good. I personally think there are a 1000 other variable to affect the individual taster's perception of a pour that are much more likely to be the cause of this phenomenon (including the placebo affect) than it is likely that every human palate is blessed with the ability to detect a flavor compound that chemical engineers have not discovered yet.

Re: neck pours, I think it's probably a myth, and it all comes down to the condition of your palate before taking a drink. Sometimes the first drink of the day doesn't taste all that great but it can often be relative to whatever your palate is like beforehand. For example, I appreciate Early Times more after having some Evan Williams BIB first and vise versa. But often if I begin with either, they will not show their characteristics very well. Also you're going to have a much different opinion if you just finished eating an apple vs. a spoon of peanut butter, and the amount of possibilities can go on and on and on, could come down to the pH of your mouth and many other factors.

Full proof is not a legal term, but a marketing term. The application of the term means barrel entry proof. Most bourbons are distilled to around 140 proof. By law they can not go in the barrel above 125 proof, so they have to add water to proof it down before it goes in the barrel. Some distilleries are lower like Wild Turkey at 110. Weller is 114. 1792 is the legal max at 125. So a Weller Full Proof will always be 114 and a 1792 Full Proof will always be 125. Russell's Reserve goes in the barrel at 110 and is bottled at 110, so it is technically a Full Proof but they do not use the term. Hope this helps.

The boxes have been manufactured and they are in transit, but it ships on a boat and there are ports that are backed up so we have no idea. Could be 3 weeks and it could be months.

I have taken the time to explain that I was referring to a non age stated bourbon that is labeled as straight. Anyone who understand the standards of identity well enough to know what a NAS bourbon is also knows the nuance of the law for 2-4 year straights with an age statement, and a 4+ year NAS. So the only people able to complain also have the ability to understand what I meant.

Another term that I haven't heard in forever is Fifth, as in a Fifth of bourbon. Is that even used today or relevant to liters?

I think people have gotten used to using the metric system when it comes to spirits. A fifth reverse to 1/5th of a gallon which is roughly 750 ml. Most people in the whiskey world just say a "seven fifty" now days instead of a "fifth".

Generally love your content-thoughtful & gimmick-free. The one request I have is nit-picky: could you *please* stop stressing the “van” in “van Winkle.” The only reason to stress that syllable would be if you were trying to distinguish it from a hypothetical O’Winkle, McWinkle, or Von Winkle. Barring that, the stressed syllable should always be “Winkle.” Not a major deal in the grand scheme but it is a nails-on-chalkboard thing that’s made me bail out early from a couple of episodes that were van Winkle-centered. Thank you!

@@BourbonRealTalk - That’s exactly it. If you try saying the alternatives I mentioned out loud you’ll probably hear what I mean: O’Winkle, McWinkle, Van Winkle. The emphasis in that case is definitely on the 1st syllable, to distinguish the differences. It’s the only case I can think of where the 1st syllable would be stronger. The same emphasis as in “Vincent Van Gogh” works for “Pappy Van Winkle.” Ugh...so hard writing this stuff rather than saying it. Sorry if I’m not making sense. If only I had enough PVW to justify this petty peeve! Anyway, it’s obviously about as unimportant as can be, so thank you for bothering to respond. Cheers!

@@irishsausage6 I got one for my birthday in January. Love it for steak, but I think it is even better for chicken. So hard to cook chicken all the way through without losing moisture and having the thinner parts dry. Steak I cook so fast and don't have to worry about moisture on the grill since I go rare to medium rare, but keeping the moisture level up in chick while it is fully cooked is a game changer!
