Paekakariki Escarpment track is fab, and might not take all day (though if you are going to and from Wellington on the train, it can), and the coffee at Paekakariki is a must

I heard Ben Lomond is Queenstown is amazing, I thought this may have been in the top hikes in nz

Ben Lomond is an excellent hike but its main advantage is you can walk it from the centre of Queenstown; I think the other hikes mentioned here are mostly better. The walk to Mueller Hut and back in Mt Cook is awesome.

None of them are actually closed, but it is not recommended to do any of the alpine tracks (Tongariro Crossing, Taranaki Summit, Avalanche Peak) in winter conditions unless you are experienced in mountaineering, and Roys Peak and Mt Holdsworth may also be dangerous in winter.
