Consuming fruits and vegetables in large quantity and variety is crucial to living a healthy life. We can break out the benefit being due largely to three categories: fiber, vitamins and minerals and phytochemicals.
Fiber - increased fiber is tied to decreased obesity and cardiovascular troubles.
Vitamins and minerals - play a role in every bodily function. Increasing quantity and variety of vitamins and minerals will reduce likelihood of disease while keeping you feeling energetic and healthy.
Phytochemicals - encompasses antioxidants, anti-inflammatory agents and phytoestrogens. Help protect cells from damage. Different fruits and vegetables have different nutrient composition, with leafy greens often leading the pack in health benefits. So which leafy greens are best? A study in in 2014 published in Preventing Chronic Disease set out to try and rate so-called powerhouse fruits and vegetables (PFV) based on nutrient density. Powerhouse fruits and vegetables are the fruits most correlated to a reduced risk of chronic diseases, such as diabetes and cardiovascular disease.
-PFV foods were here defined as those containing 10% or more of the daily value per 100 kcal of 17 nutrients correlated with the largest health benefits. 47 foods were studied with 41 satisfying this rule and were more nutrient-dense than those not defined as PFV.
-To give each of these foods a score, both the nutritional content of the 17 nutrients along with the bioavailability of each was evaluated.
Here is a list of my favorite five and how they benefit your health:
4 of the five of those below were in the top 10 scoring PFV, with the other yielding some benefits different from the others that I find valuable. These leafy greens are also discussed widely for their nutritional value.
5. Collard Greens: 10th highest nutrient density score on above mentioned PFV study (2)
-Very high in vitamins K and A, which are crucial for bone health, brain function and eyesight. (3)
-High in the carotenoid lutein, which is especially important in eye health, particularly the retina. (4)
-Help lower cholesterol due to ability to bind with bile acids in the digestive system, helping to remove excess cholesterol. (3)
-Very bitter, so better to lightly saute and season rather than juice. (3)
4. Kale: *Protein powerhouse!
-While not in the top 10 PFV, still considered a PV.
-Contains all 9 essential amino acids - very good food for vegetarians
-More omega-3s than omega-6s.
-Contains greater than your daily recommended quantities of vitamins C, A and K1. These are important for bone health, eyesight, brain functioning as well as vitamin C being a powerful antioxidant.
3. Spinach: 5th highest nutrient density score on above mentioned PFV study (2)
-High in protein, niacin, zinc, fiber, potassium, calcium and vitamins A, C, E and K, just to name a few. (3)
-Also high in the carotenoid lutein, which is great for eye health, as mentioned earlier. (4)
-One of the best foods for brain health and function. Boost your memory ability with this superfood. (3)
2. Beet Greens: 4th highest nutrient density score on above mentioned PFV study (2)
-Many people purchase beets with the stems and make the mistake of cutting off the beet greens, which are more loaded nutritionally than the beets themselves! (4)
-Contains vitamins K and calcium, making it great for bone health. This may also help to fight Alzheimer’s disease. (3)
-Even more iron than spinach, which is crucial for everyone, but especially women and vegetarians, who are often found to have low iron levels. (3)
-Also high in vitamins A and C and magnesium. (3,4)

-Packed with vitamins C, E, and A, magnesium and zinc. (3)
-Syringic acid helps to regulate blood sugar and thus can be helpful for those with diabetes. (3)
-Contains kaempferol, a flavonol linked to decreased risk of cancer and chronic diseases (3).
-Ranked as number 1 due to the ability to detoxify your body. Betalin pigments in swiss chard help to excrete toxins from your body. (3)

I personally saute Swiss Chard, spinach ,collard greens,Kale and Bok choy with any leftover meat I happen to have in the fridge ( pork,bacon, chicken or beef) I saute it in olive oil, and coconut oil with a turmeric,chyanne, ginger, garlic powder mix, with some cream of tartar thrown in . Make it in bulk and put it 16oz. tubs and that is my lunches for the week. taste awesome

I've tried that before, it's amazing. This week I prepared a bean salad with Swiss chard, I cooked black eyed beans and served them with chard sautéed with garlic and mustard vinaigrette.

just made awesome breakfast of Brussels sprouts stir fried in olive oil with mushrooms, pecans, raisins, seasoned with rock salt, onion powder, garlic powder, cayenne pepper powder! Yum. Way to inspire Thomas!

I grow swiss chard indoors and cut it as about a 3-4" leaf. It has been growing for a full year and I just cut new growth. I don't know of the nutritional makeup in a year old plant but it just keeps growing. My favorite green. It has such an interesting taste. I am going to plant a second tray and keep the original going as long as it wants to.

Great suggestions! I usually git a $5 big box of organic baby spinach, baby chard, and baby kale. Put a steak, salmon, or pork chop on top of it and go to town!

Also worth mentioning not to eat too much spinach and beet greens because of oxalate overload. Many stories of kidney stones and organ failure can occur from this.

Greens are truly a gift from God...Eat them, they really do have amazing benefits. Gen 1:30 and to everything moving on the earth in which there is life, I have given all green vegetation for food. There is a reason why the scriptures specifically mentioned green vegetation. It's what nourishes the flesh and keeps us healthy....Eat to your hearts content and enjoy.

Bitter food is great for you! I think everyone should start eating bitter food starting from babyhood so they can acquire the taste. I wasn’t loving the taste either but my family always makes bitter herbal decoctions and bitter melon soup so got used to the bitter. Anything that’s good for me I’ll suck it up and eat it.😊

I've eaten lots of Swiss Chard this week, as my garden is low on Kale. So I noticed I'm very low on energy, feeling not very energetic. Also, my Continous Glucose Monitor reports very low Blood Glucose levels. I avoid caffeine as I'm very sensitive to it but I just had a cup of Black Tea to give me some energy.

Thomas, I have mentioned this in the comments previously and received no answer. I think you should honestly consider creating a video that shows your approach to your day or possibly even your week so people get a run down of how you fuel that many calories in a healthy way.

The problem with this is Thomas would need to plan a perfect day which likely cannot be done. Likewise, many may attempt to emulate that single day completely. "Thomas DeLauer eats THIS specific brand." "Thomas DeLauer eats THIS every day!" "Even though this isn't the best brand/version, Thomas DeLauer eats THIS specific brand/version!" Can end backfiring easily. Plus I'm sure Thomas is always learning new stuff so it's not ideal to make a finite grocery list. This is my guess as to why it hasn't been done yet. Although I'm just as curious to see it as you are!

I’m a big fan of spinach and kale. I use them in smoothies, egg cups and use the kale to make chips on the oven. They also freeze very well. The only leafy green I really don’t like is Swiss chard because it’s so bitter (my mom however is a huge fan-I guess she was onto something).

Black strap molasses is a wonderful iron supplement, the best part about it is it’s highly absorbed compared to supplements. I love Swiss chard!!!

All of these greens make a great, Super Green Shake. Start with 2 Cups Purified Water, add some or all of there greens in a heavy duty blender on "Puree" and you can add a little (I add one individual packet) of Stevia to counter the bitterness without adding any sugar/carbs.

Collard greens are not easily available in Australia, and what is called Swiss Chard in the USA is called Silverbeet her in Aus (spinach in the UK). Hope this info is helpful!

I like buying fresh Herring. Here in the Uk it is pretty cheap at only 36p per 100g (approx 47 US cent). I find that eating eggs, liver and herring together every day is not only way healthier and much more nutrient dense, but is a lot cheaper than other more popular protein sources. Choline and basically every nutrient from eggs. Ground down the egg shells for a natural calcium supplement. B12, vit A, folate, iron and copper in liver. Vitamin D, b12, b6, omega 3, folate and magnesium in herring. Add some avocados, spinach, swiss chard (or even bone broth) for all the rest of the nutrients. Go low carb with sweet potatoes and beans for carbs or alternatively eat lots of fat on the keto diet (75-80%) for caloric needs. Have a 24 hour fast at the end of every week. Yes, eating the same thing everyday can get boring and it is very restrictive and anal, but for me this is the healthiest diet I have ever tried and the protein sources mean that it is pretty cheap too. I suffer from Crohns and Ankylosing Spondylitis at the age of 26, but my symptoms disappear almost to nothing when I eat this way for a few months but return with vengeance as soon as I eat just a bite of the whole grain based food pyramid that we are recommended. Given the clear anti-inflammatory and immunity benefits that I have seen I can 100% recommend this diet to anyone whether they have similar issues or not.

Thanks for an excellent video. I haven't eaten beet greens in years but am off to the grocer's tomorrow, for swiss chard and beet greens. I will eat well for two days and then do a 36 hour fast. And, I had my first caffeinated Keto coffee this morning...yum!

Vicki Takacs idk if it would kill all the nutrients but you cut up a whole onion and some kind of pork - bacon, or whatever and cook that in olive oil for about 20 minutes on medium. Then add in your fresh greens with chicken broth about I'd say a cup or more. Add in spices and let cook about 40 minutes on medium and whala

Brian Norton ha glad I seen you're comment because I actually make a kale/spinach (whatever you choose) with pineapple and banana (however much fits you're blender and you're appetite) and it's sooo good I use the nutrabullet machine very good. Also another smoothie I use everyday is a banana, strawberry, and a little berry. And I use Almond Breeze milk with both smoothies. (Extremely important to have Almond Breeze milk for the best smoothie taste.)

Spinach leaves bell peppers and onions go great on hamburgers and sandwiches especially Philly cheese steak sandwiches and black Chuck hamburgers

Collard are the best greens you can eat. They also have more protein that all other leafy vegetables!

so funny Thomas. my dad 85 yrs old living down from you in Oxnard grows Swiss chard in the backyard . (not used in Hispanic dishes) why I wonder. Father knows best I guess..

Love your videos!!! So much it helps me to lose 45 pounds in 6 months I’m so happy,!! One question is on protein shakes do u think it is necessary to have protein shakes? I’m not eating meets or chicken some times salmon but do a lot of greens like you just said here

I avoid spinach and kale. The oxalates. I go with Asteraceae, Apiaceae, some Cruciferae,.. and rarely Amaranthaceae.

thank you for this video and all the rest, i really like how you break things down. i am on a quest to go from 268 to 200 and am now 40 pounds from my goal. the amazing thing form me is my feet don't hurt or ache anymore and i have a tun more energy. again thanks and please keep posting. I also went for 12 months with Hashimoto's undetected until one doctor saved my life. don't trust doctors, they only guess. and if you find a good one pay him cash if you have to like i have been doing. my recovery from bad medical care has now reached an amazing pace and feel better then i did when i was 30 and i am soon to be 50 cheers all and live love with every cell you have.

Swiss chard is pretty easy to grow - especially in a northern or mountainous climate. The bugs like the leaves - but if you keep the bugs out, it is easy to grow. I eat the leaves even if bugs have chewed on them. Also, once you get asparagus started - which takes a while - but once it is started, very easy to grow. And nothing tastes better than home grown asparagus.

I also eat the leaves after the bugs ate some lol~They grow well here in Texas mid coastal area too.~ The stems are really great too. I cut them into pieces less then an inch..Start cooking them before the green.~ Just started asparagus...watched a lot of videos...✌🏼

Do you have any concerns about the oxilate levels in raw leafy greens?I’ve been told that they should always be cooked? I’d like to know your opinion on all foods that are considered( by some) to be anti nutrients.Lectins,oxilates,phytic acid,gluten,ect. Thanks
