Heat Oil: In a pan, heat oil over medium heat. Add the cumin seeds and mustard seeds. Once they splutter, proceed to the next step.
Sauté Onions: Add the finely chopped onions and green chilies (if using). Sauté until the onions turn translucent.
Add Tomatoes: Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.
Add Spices: Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.
Cook Tori: Add the chopped ridge gourd to the pan. Stir to combine everything.
Simmer: Cover the pan and cook on low heat for about 10-15 minutes, or until the tori is tender. Stir occasionally.
Finish with Garam Masala: Once the tori is cooked, add garam masala and mix well. Cook for another 2 minutes.
Garnish and Serve: Garnish with fresh cilantro and serve hot with roti or rice.
