Awesome recipe for turai. We make every week at our house in mustard sauce. You mentioned using daler bori, made me nostalgic. In Maharashtra, the hard skinned is called Shirala/Dodke, while the soft skinned (which is not common in markets) is called Gilke.

We substituted ghee with mustard oil (personal preference) & it turned out to be really tasty... 😋 Even though we skipped ginger, saunf & coriander leaves (ran out of them)😓

Loved this. Wud really appreciate if u make lauki, tinda, parwal (not tendli) gawaar, drumsticks, karela etc too I mean not the usual stuff but the seasonal sabzis and also not the usual dals, legumes but the uncommon ones. If u give us tasty recipe of the same then they will become a part of our everyday menu. Like the jimikand receipe u showed..

Nope it's not chichinge... Which Chef Ranveer was peeling and cooking is our Jhinge (not confuse with Jhinga/Prawns) ... Ridge gourd in English. What he was talking about is called Sponge gourd...aka Loofa /Hoopa in bengali. What you are talking about is called Snake gourd (Chichinga)... Commonly cooked with prawns.

When i first came to France for my higher studies, i didn't even have the idea how long i should boil an egg!! We in Maharashtra make the dry chutney of the left over peals of ridge gourd. It has dry coconut, load of green dhania, teel, crushed roasted peanuts, curry leaves, cumin, amchur powder, sugar and chili or chili powder. It's a travel accompaniment with roti, curd rice..
