Ingredients:
two tablespoons of oil
one onion
two carrots
two cloves of garlic
one stalk of celery
one tablespoon of dried basil
one tablespoon of dried thyme
one tablespoon of dried oregano
two tablespoons of veggie bullion or salt
3 liters of water or broth
250 ml of tomato juice
one pack of tortellini or tortelloni
cooked white butter beans - approx. 300 g
baby spinach
200 ml of greek yogurt or sour cream
two heaping tablespoons of full fat coconut milk
Steps:
Sauté the vegetables for a few minutes
Use the Soup function for 5 minutes
Release the pressure manually (or naturally)
Add the beans and spinach
Bring to a boil just until you incorporate the following:
Yogurt and coconut milk, tempered to prevent curdling
