I saw a play where the guy running into the end zone dropped the ball before crossing the end zone line (guess he was a little bit over-celebratory) and the refs ruled it a touch back. I didn't understand why. I'm guessing the ball bounced out of the field of play?

Yup! Either he dropped it and it went of bounds, of the other team recovered it in their end zone
