Try it without the tuning plates T-Roy! Best thing I ever did! Control the heat with the size of the fire and put it closer to the fire door and I'm telling you it's going to be money!

I have watched your chicken leg quarter video on the LSG at your old house a number times. I now have a LSG 20x36 offset and the same size pellet smoker and enjoy them both. Beautiful offset Lonestar Grillz makes good equipment I have mine for 5years now and love it. The V shape wood holder I have and I still perfer cooking without it. I also keep my door cracked and inlet always fully open. It allows that smoke to be super clean.

I think right after I discovered How to BBQ Right, you were the second BBQ video I found. I have always enjoyed your videos because you kept it honest. You even admit when you had forgot something.
