Traditional Basquaise chicken recipe with my secrets of the recipe. A recipe that I have had in my family for a very long time. These are pieces of chicken simmered in a piperade. Ingredients:
1 kg of chicken
Flour
2 carrots
1 onion
1 glass of white or Madeira wine
90g butter
1 kg of tomatoes
500 g peppers
1 chilli
Olive oil
160 g of Bayonne ham
1 handful of parsley
1 - If you don't drink alcohol, white wine can be replaced by 2/3 of a glass of water and 1/3 of vinegar.
2 - Pork can be replaced by duck fat.
