the idea of hooking up mics to Rick and his guest and having the cameras stand a little further back with a zoom lens during the section in the restaurant made it look much more casual and natural because it put the rest of the strangers in the place more at ease. I really wish more shows did this when filming in public

i was thinking maybe it was for covid reasons or for respect of the employees but honestly either way shows definitely should be like this more often! you cant even tell it was that zoomed in bc theres so many angles!!

I think this might be my favorite series on youtube. Not only is it filmed beautifully, but the food always looks delicious and this show is bringing an insight of culture and food to people, like me, who have never had the chance to learn about it before. Rick is obviously so passionate and its wonderful to see him share with that all of us. I'm so excited to see what else Rick has in store for us!

I am always amazed at the incredible diversity of tacos in Mexico. Here in Texas we just are at the tip of the taco iceberg. There’s a wonderful world of tacos out there to be enjoyed by everyone.

If you wanna go really traditional, try putting some grasshoppers in your taco. We sell fried grasshoppers in plazas and such. Haven't tried it myself but some Mexicans do eat bugs

@@DragonguyA they taste kind of like charales, but not really. A little salty, a little sour, with a fishy flavor and the crunch of chicharrón dorado. Not a real fan, but I've tried them a couple times in my life, it's a must have even if you don't like them hehe

There is a Netflix series that is called the Taco Chronicles and it does an amazing job showing just how many types of tacos exist. It tells the history of each taco as well. Just as beautiful a production as this episode

I visited Jalisco earlier this month and it was one of the most beautiful places I've ever been! The people were so friendly and the food was amazing. I'll defiantly be visiting again!

It’s beautiful to see traditional Mexican cuisine receiving the respect and recognition it deserves. I hope this is followed up by an episode where Rick faithfully and respectfully preserves the flavors and spirit of the dish, but uses utensils that can be found in regular kitchens like the stove, an oven or even a slow cooker. I know it’s not the same, but it can be done and get amazing results by following the right recipes with the right ingredients, instead of those botched attempts by the likes of Rachel Ray.

I love the fact that although they have quiet music playing in the background, they still bring a lot of the general sounds and ambience happening in the environment to the forefront. It's small touches like that that really make a video great.

They both put into words my feelings about food. Its a joining of hands and hearts around a table, and you can learn so much about a group of people and their culture. Maybe one day we can all come together and enjoy that love and harmony that happens at a dinner table in everyday life. I feel like I should mention that you shouldn't give your dog cooked bones of any kind. Cooked bones splinter in ways that uncooked ones don't. This can really damage your dog, and Choco is too cute to deal with that. The show is great and the food looks amazing, though.

Naturally recoil at the idea of orange in most savoury dishes, including orange duck, but with that amount mixed in with all those chiles in that rich slow cooked meat I can imagine its great, just enough to add a bit of sugar and acid. I've also never seen spring onions used whole in a dish before, there are some great ideas in this one.

I don't know if this is the case (have never tried Tamazula's birria, though I live not too far from there), but sometimes when a dish calls for orange, it is meant to be "Naranja Agria" or "Sour orange". Again, I don't know if this is the case with this recipe, but is something to consider when using orange in these kinds of dishes.

@@CarlosChSa Wow a sour flavour might be even better, I'd really have no idea unless I actually try it. Are there any more common fruit substitutes you can think of to replace the orange with a slightly more sour version?

@@RamiAbdelal Also even if using sweet oranges the juice can help with caramelization in a dish like carnitias. Sour oranges would be fantastic and are harder to find in the states. Sour it up with lime or lemon.

Admittedly, I interpreted it as he never PERSONALLY cooked the food, he just prepped it and brought it to the oven guy, who cooked it for him. So, it's still his recipe, he just never actually cooked in an oven like that, because those ovens are unique, so the guy who DOES own the ovens does the cooking.

Yes, exactly. He usually slowly simmers it first time putting it in this type of oven.

As someone who loves how Rick Martinez cooks and is planning on moving to Mexico I am loving this series so much. It's like I can imagine losing myself in a small town anywhere in Mexico and living a life there surrounded by authenticity and down to earth humble beauty. This series is truly wonderful. I love this series. I worked in a kitchen with a bunch of guys born and raised in Puerto Vallarta in Jalisco and they'd make family recipes for the whole kitchen to snack on during our long shifts and it made me want to visit.
