I just made this recipe, and these are the meatiest, most delicious Charro Beans I've ever enjoyed. I was targeting the Goode Company BBQ (Houston) Jalapeno Pinto Beans side dish as I sought recipes on the web... but Kent's Charro's are even meatier and even better. Pinto's have a naturally nice "meaty" flavor differentiating them from other beans, which I'm partial towards. I was a little skeptical of the hotdogs, but after making a batch with good dogs, I'm digging them... good Andouille would work also. The 4 meats (thick cut bacon, ham steak, chorizo, hotdogs) mixed together really is very interesting and hearty, and makes these beans a meal all unto themselves. Kudos, Kent! This recipe is a big winner. Glad you got help with Tachycardia, sir!

I’m from Monterrey Mexico almost 53 years old and I love cooking, charro beans is one of my specialty and I’m gonna give you my recipe and try it, you will see the difference. Fry the bacon in a pot the way don’t get to fried just medium then add the onion, then about 4 Serrano peppers cutter in rounds that way whoever doesn’t like pepper is easy takeout of their bowl and then add the tomato, let them cook for around 5 minutes and then add the special ingredient half beer and let hem boil another 5 minutes. In a different pot boil pork toes in small pieces and pork skin in squares, let them boil in slow fire for about 2 at 2:30 hours until they are really soft. Once you have your beans already cooked add the salsa and the pork skin and toes without the water of the toes or you can add just a little bit because there’s a lot of fat on it, let them boil for around 20 minutes and add salt, once they are ready turn it off and add good portion of cilantro in 3 or 4 inch size pieces and throw it in the pot, cover with the lid and let them rest for another 20 minutes and then my friend you gonna eat the BEST CHARRO BEANS in your life. 👍🏼

A quick way that I learned to get rid of rocks and grit from your beans…panning for gold. Instead of sifting all those beans off the kitchen counter, get you some form of pan (even a gold pan if you have one) swirl those beans around in the pan (like panning for gold), and all of those heavier rocks and sand with go to the bottom of the pan, keep working it into one focal point in the pan while letting the actual beans spill over into another container, and by the end you will have washed those beans, and all the rocks and grit will be in the bottom corner of that pan. I don’t worry about picking out those half bean…they are beans, too. Just watch you a video on panning for gold, and you can clean and de-rock your beans in about 30 seconds…instead of several minutes of sorting through beans on the counter.

They sure do look tasty! Be well, sir. John & Bear Hi again, Kent. Well, here’s how it went: I picked up a bag of chicharrones the other day, but as is pretty likely to happen around the ranch here, my grandsons showed up and made them disappear. Figures. Turns out that Bear is kind of a fan, too.🙄 So I made the beans anyway, and good Lord they are GREAT. That combo of ancho and guajillo are perfect. Given the unpredictability of jalapeños, I oven roasted a habanero (seeded) and threw that in, too. Wow. Thanks a big bunch for this recipe. Carry, on, you great folks! 👍👍👍
