In the USA we call that curd, not cheese. It does have a milder flavor than cheese and is lovely! A nice summer day snack!

It's pretty much the oldest form of cheese-making, a direct ancestor to Feta (which has also got an ancient history). Most of the stuff we think of as cheese today originated from the medieval period, although there was already a massive diversity by the time of the Roman Empire, that would be analogous. It was probably invented by Steppe People, because it's a good survival food, ironically since they were on the move a lot they didn't really have time to pioneer other methods that would vastly increase shelf-life as you find in European or Middle Eastern Cheeses.

Looked like she added a fair amount of fermented milk (buttermilk) to get her curds set. I think that would make that fall under cottage cheese less the whey? Whatever.... Made from the rich flavorful goats milk, I'll bet it's tasty.
