Its called guineitos en escabeche what your makeing. Its delicious. I also put bay leaves and olives in mines black pepper also. Its yummy.

Hi, I am so happy I found you. I have been on a quest asking every youtubber that make pasteles or guineos for the difference between green gassed cooking bananas and a regular banana that you eat ripened. can you please clarify this. you stated your bababa grows everywhere in PR, so are they the regular bananas we eat when ripened or are they green cooking bananas? I am attempting to make pasteles and I have been buying the cooking grenn bananas at my supermarket as opposed to the unripened green regular ones, No one is answering this question on the web, can you please......

Plantains are different than bananas. Goineo's are much smaller and sweet like a regular banana. Here in PR we have both types of trees.

Does leaving the skin on not give it a bitter taste??? Getting ready to make them but I in all my 35 years of married and cooking for my Puerto Rican Husband, have I ever left the skins on.....

Boil the guineos with the skin on but sliced down the middle. When boiling is complete, let them cool and then peel them.
