Excellent recipe. I made Five Bean soup today. At the point where I had already soaked them. I decided to look at how other people do their soup and as I have always loved Navy Bean or Great Northern Bean, decided to use spices (the mustard) as you suggest. I tend to use marjoram instead of thyme at this time of the year.

Looks good. On the same note as how you should never throw out a good ham bone, it's also a waste to simply toss the ham hocks. There's at least a 1/4 - 1/2 cup per hock of very tasty meat you can get off and chop up to add into the soup as well. Not to mention ham hocks have skyrocketed to a ridiculous price over the past year or so - nearly as much if not more than some bacon/pork chops/stew beef cuts. Hard to find for less than $6 or more per lb now.

Wonderful soup! Except for a couple of the spices, it's just as my mother made. Here's a little facto that I learned in my teen years. Senator Everett Dirksen of Illinois loved this soup so much that he had it put in the Congressional Record that the soup be on the menu every day. Then it was called Senate Bean Soup. 🐱

That looks so attractive as it should. When I can find really low or no sodium ham I do enjoy it. Your ingredient choices are really all in my liking especially adding carrots. So often people pass up this wonderful flavor and color in dishes. If anyone else is looking for lower sodium try Boar's Head. I love a good soup and actually today we are having Chili made with shredded chicken. If you've never tried it don't knock it. Odds are you wont miss the hamburger that is generally used. Chicken chili doesn't sound bad. I actually use ground turkey for my chili... unless of course I have some venison lying around.

if you don't often buy whole hams go to your butcher and get a smoked pork shank, lots of meat and good fatty flavor plus a nice bone to build your broth. Also, I buy smoked pork neckbones, not so much fat but lots of meat and bone to flavor the broth.

I’m making this right now, although I don’t have ham hock. I’m using smoked paprika. I have it on hand and I’m thinking the smoke flavor will add a little something extra. Thoughts?

If you use smoked neck bones instead of those fatty hocks, there won’t be so much fat. And why use hocks only to discard them? Strip off the fatty rind and take the meat from the bones. It is good.

first of all you are making ham and bean soup no chicken broth should it should be smoked ham base second use great nothern beans in the gallon can and dont drain this gives your broth this is coming from someone who has been making soup for 20 years in a 20 gallon cast iron kettle and sell out ever time
