Trapping Wild Pigs In Louisiana (Catch*Clean*Cook) Huge Pork Gravy For 150 People

In this video, I show setting the trap and then catching six perfect size pigs the next day. I cleaned and quartered the pigs at the camp. Back at my house, I cut up the four pigs with my meat saw and seasoned all the meat with KFRED Seasoning. A couple days later, I cooked for 150 people at Whitco Supply. We had a huge pot of wild pork gravy, served with white beans, smoke sausage and corn maque choux. It came out so good, everyone couldn't believe it was wild pork because it had no gamey taste to it.
Thank you so much for watching! Merry Christmas and happy holidays!

Perhaps the best video I've seen where ethics, cleanliness, attention to detail and acting responsibly coming into play: from neutralising the hogs to passing on the meat to local communities so they don't have to worry about their next meal - excellent work. Best regards from the UK.

Makes me proud of my Cajun heritage. A typically practical, ethical solution to the problem of wild hogs. Just eat the darned things! I live up north now (Minnesota, not Shreveport), and I remember the neighboring state of Wisconsin being concerned about an "invasion" of crawfish. Seriously, I didn't see a problem a few hungry Cajun families couldn't solve then either.

i mean… it was sort of like effectively its own country before Thomas Jefferson and the Louisiana Purchase while yet still a “formal” colonial territory of the Royal Crown of France… and even after that for another hundred years. The Acadians who migrated there and established Cajun and Creole culture were, effectively, their own independent nation just, they never formally “declared” independence from France, or from the fledgling USA after the Louisiana Purchase. Hahaha but yah, pretty much, effectively, an “autonomous region” as the modern saying goes, autonomous for couple hundred years and the Cajuns became “Cajun” during that time. And we are thankful indeed!
@nozrep
@nozrep Жыл бұрын
compare to Texas, on the other hand. The Spanish colonialists established their own regional culture also. Then, Americans through Stephen F. Austin colonized it some more with the legal permission of the Spanish Crown. And then Mexico revolted and established a dictatorship, and then the Texians which included Spanish and Americans and Indians formally declared independence because of Santa Anna’s abuses of power as a dictator, and won it, against dictator Santa Anna. And then TX was its own nation. And then got annexed by USA in 1845 because Lamar and other Texian politicians were bad bad financial managers after independence and their currency was worthless by the time of annexation in 1845. Ohhhhhh jeez I love love love histories!!!!!!!!

I can suggest that for the rest of the carcass - innards etc, you can use a farm mixer and mix it with compost and Molasses... then lay it into a windrow and introduce compatible earthworms to convert it into fertilizer. Black solder flies will do the first part followed by the earthworms (which must be left at the sides of the windrow) -- the earthworms will know when to move in after the black soldier flies. Cover the windrow with breathable composting fabric to keep out the rain.. that pile of super rich compost can grow lots of food.

Viewing from Wisconsin. Outstanding job! So smart! Cooking pork first, then adding everything else. Adding water to not only provide sauce but to make pork nice and moist. If I get back to Louisiana, I’m definitely stopping to praise your cooking!!

I worked in the Oil Patch out of Lafayette. Loved every minute of it. Prejean's was my favorite for Gumbo but I also frequented Randol's for the open Mic nights and of course the food. I'm up near Pittsburgh now but I'll never forget how amazing the food and hospitality was there. Fun video 🙂 Thanks guys

Reminds me of our highly prized mountain pigs here in Taiwan. No game flavor - just the best pork you can get. Nice video!

I haven't eaten pork for basically decades. I grew up eating it. I'ma tell you: My mouth was watering seeing this. And the smell of barbecue pork is still incredible.

Nice! Reminds me a few years back, I harvested one out of a farm in Central California. Made cajon sausage out of most of it. Fun trip and good eating for about 6 months.

New to your channel ❤Those wild pig caught are the best pigs to eat if you eat pork much cleaner pork and Much better pork eating than those farm raise pigs. Great job fellas, went to school in deep south in florida in the early 80s. You guys do a much better job than back in the early days hunting and cleaning love that trap made and your whole setup. Great job.
