It's actually pretty overwhelming how different the same dish could be from restaurant to restaurant. I ate the best ramen of my life next to Kyoto castle in a Kyoto-only ramen chain. I then tried going to another joint still inside Kyoto and the dish was completely different. In the case of okonomiyaki where it literally means "as you would like" you have infinite types of combinations, and not only just a difference between Osaka vs Hiroshima styles. The only thing you need to expect from this is that the pancake will be fluffy, and the combination of Japanese mayo, bonito flakes and okonomiyaki sauce will be brutally delicious.
