Your family is awesome. Very adventurous and the kids are cool to try new things. Most kids today aren't as adventurous with food and new places. Definitely local street food bonding. "Masarap"is how you say delicious in tagalog, our local dialect.

The purple one is what you call an UBE which is abundant here in the Philippines..these are also healthy desserts even though they're sweet because they're cooked naturally..

Ube is also only grown in the Philippines or endemic here. You should have done a proper food crawl around Quiapo from a guide or even just ask locals for iconic or heritage food stalls found in the area

I can’t believe I’ll see you in Quiapo where I grew up going to QUINTA MARKET. My mom would always go there with us when we were kids and frequently order PALABOK and KUTSINTA ( a sweet rice cake) which I really love. Street food out there are so cheap and delicious. The quail egg is called KWEK-KWEK. I miss the Quiapo church and the NAZARENO.

Turn left, looked for the Palabok in mashed pork rind also in gravy They color their sauce with crushed annato oil while your at it try the franchise Mang Inasal and try their unlimited rice.

The thick purple that is sticky is called, UBE HALAYA or PURPLE YAM JAM. It is made from boiled and mashed purple yam.

Bibingka - made with glutinous rice and on top made with coconut and brown sugar, violet is same made with glutinous rice it's Biko they put coloring, the sticky starch is like kalamay made with glutinous powder and they put coloring as well, the other one with granulated is casava cake made with crashed casava

BBQ pork buns are sweet, touch of saltiness and the red is like sugary paste that I know how to make and what is involved. A cheating method to add sweetness would be honey. But normally it's sugar, Chinese cooking wine, 5 spice, sugar, salt, Chinese red (artificial colour). You mix the pork in it which is to allow the colour and flavour soak and absorb into the pork, then allow to sit overnight Then roasting in oven for about 1 hour 45 minutes depending if the pork is cooked through. Then turn over and do another 45 minutes Once cooked, cut the pork belly into slices to have original BBQ pork like you see many in HK. It diced for making fried rice or steamed pork buns (add onions for steamed pork buns) Or you can cut into dices to have san choy bow. Another option is to eat it like steak 🥩

If im not mistaken the orange color of the sotanghon is from asuete seeds, the seeds are deep red in color the size close to coffee beans, it would be soaked in water till the water comes out red or orange and the pour it into the soup, this is also used in adobo pork or chicken and other dishes…in making sotanghon have different variations, I personally use chicken as it is easier to cook with and faster

The sticky purple one is a purple yam or ube in the Philippines the brown one is the bibingka and the another purple one is sinukmani. The white bun is called Siopao
