The history of the chimichurri in argentine pizza comes from the fact that olive oil was not available in Argentina in the early 1900s so to infuse flavor into the pizza they started adding herbs, spices and garlic to the vegetable oil. Traditional chimichurri has red wine vinegar and chimichurri pizzero does not.
