What an incredible experience. That pizza despite being less than perfect, would have tasted divine, after having driven 1000km all the way to Italy, just to bake it by the shores of a beautiful lake, having ducks with iridescent, electric blue -green heads waddling around to keep you company. It was certainly a pizza with a difference!

I made pizza for 13 years. You did a pretty good job for a beginner :) one little tip I learnt was to drop topping on. Don’t press them down, let’s the heat cook the ingredients

What an amazing awesome adventure for pizza. Don’t beat yourself up, life is all about learning and especially with something as tricky as making pizza from scratch from a home on wheels, a van. You have to learn somewhere. If you need to learn anything it’s really how to get into body of water…. Do you dive? Bomb? Or pencil? Because like your previous video! You do need to have a plan. Beautiful scenery.

Hi Alex, Loving the videos. As somebody who has converted a couple of vans now into campers for fun your videos make me want to build another :) The thing with the Ooni ovens are you really need to practice with them, I could never get on with the wood burning so brought the gas conversion which made controlling the heat a lot easier. I would also recommend chucking a handful of semolina or polenta (uncooked) on the pizza stone before you put your pizza in, it makes getting it out the oven a lot easier, and stops any chance of it sticking.

Hi Alex, I’ve had an ooni since the second lockdown, and I’ve found when cooking with the gas attachment you can get a nice char on the crusts and base if you heat it up to the maximum temperature then turn it down when you put the pizza in, to allow the base to cook more than the rest. Keep up the good work- love the content!!

Hey man you should try the dough recipe from Vito Iacopelli(look it up on youtube). It's the best pizza dough I have ever had and I didn't even use a pizza oven I'm sure it would turn out fantastic for you(although yours looks good). Also keep in mind your pizza oven should be somewhere around 500C so quite hot too cook it fast enough for a good texture(it would cook the pizza in less than 2min). Love your videos keep it up!

Hi Alex, I think it would possibly be a good idea to get yourself a little rechargeable fan to aim at the coals, this’ll aid in the heating of the oven and really build up the heat you desire. I got one a few years ago to clip onto my bivvy, that I connect to my usb solar panel. I now use itto give my BBQ a kick up the bum when the stakes go on! Just a thought… Also, loving the content man 🤙😁

Great vid Alex. I reckon cooking pizza in an ooni is much like bbq in as much as theres more to it than just sticking some charcoal in and wacking something over it. Trial and error is bound to be a factor. Having watched (and greatly enjoyed) all your vids and seen how youve persevered with all your projects Im pretty confident that youll crack it in no time. Very nice! Alex try next time to add the starter to water and mix in with your fingers before adding the flour. Also try it with some Tipo 00 flour for pure tradition! Love the videos

I bet the pizza in your clay version at Carls was better... I have had pizza out of those new fangled pizza ovens... nothing compared to getting my clay and brick oven up to 650C and it cooking in 30seconds.

There’s a pizza course run by someone called Marco Fuso in the UK. He’s incredible, and so knowledgeable. I would definitely recommend one of his courses if you want to level up your pizza game. I have been a pizzaiolo for the past 6 years after being trained by Marco 👍.
