This comment section.... street food is never as clean as a restaurant that is well run, and after being in Japan for 2 weeks I can confirm most streets in japan are cleaner than some restaurants in America. The other thing is everyone saying it’s healthy food because of the vegetables... um cabbage is no better than iceberg lettuce, I guess you could say it’s fiber, but cmon now

It depends on the area but either okonomi sauce or bulldog sauce. You can usually buy a commercially made version at an asian market.
