18:24 It's called Nom Ka Chhai or Chive Cakes. It's like Dough mixing with chive and garlic. Sweet fish sauce is a must and she added chilli sauce plus red chilli paste. That's a perfect combo. Now m getting hungry 😋. Can't wait to go visit my hometown this year !!!

I went to that stand because of this video in 2022. Excellent food for being 6000 miles away from California or Mexico. Dude is super chill and down to earth. I hope he is still thriving. It is quite entertaining to see a foreigner enjoy our street food that much. I am sure that during filming a lot of people on the street looked at you in amaze. The guy with Honda Moto is the seller of Nhorm Lahong “papaya salad” and the noodle is called Num Banhchok. And the lady sells “num Kuchhai” or Chive cake, my favorite street food.

At 15:00 the rice noodle dish I’ve always called it “nom ban chok tuk treh” meaning rice noodles with fish sauce. I also love that dish I grew up eating that since childhood and still enjoy it. We have so many delish food 🤤

The noodle salad you had on the street near Russian market was called “Nhoam L’Hong” (technically Vietnamese version of papaya salad with rice noodle, pork skin, freshwater krill, mixed basils and fish sauce). And the pancake is Chive pancakes/rice cake, in Khmer we call it Nom Kuchive. I believe the first meal you had at central market was a Vietnamese rice noodle soup.

The noodle dish you had is called yam lahon. (spelling I'm sure is wrong) It a type of a papaya salad with a sweet fish sauce. Keep up the solid content!

I was born in Vietnam and my mom moved us to Cambodia when i was young boy. And we left Cambodia in 1988 moved back to Vietnam to do paperwork to come to the US got here in 1992. I missed Cambodia and Vietnam.

The “potato pancakes” lady said it’s called “Nom with chives” but she has a strong accent. “Nom” in Khmer means snack, desserts, pastries, etc. It’s basically the sound we make “nom nom nom” is where it derived from.

It’s Nom Ka Chhai. Ka Chhai translates to garlic chives. Some Chinese dialects’ and Thailand’s translation of garlic chives also have a similar tone.
