Hi Karolyn, when you put the cake in the fridge after icing it, do you cover it or leave it uncovered? I am doing the diamond mold next weekend for a client.

I'm not 100% sure. Ganache tends to set hard, so it may be difficult to get the impression in there. It may work, but you might have to spray the mat with something to prevent it from sticking to the ganache.

Hello I know you posted this video along time ago but I needed help and yours was brilliant. I did exactly what you did I iced my cake with buttercream and refrigerated it overnight. Took it out let it sit for an hour, almost an hour 50 minutes. And I tried to use the mold and the icing stuck to the mold. I have the exact mold I ordered from Amazon months or years ago too. I was just wondering did you put anything on your mold so that it wouldn’t stick?

I also used Swiss meringue buttercream, maybe that was the problem?

@@fatimapc3590 yup that’s the problem. Meringue Buttercream doesn’t crust. I only work with American Buttercream so this technique only works with crusting Buttercream. I mentioned that briefly at the end and should have been more clear about that!

What would you recommend for greasing the mold? I just did a trial on a cake form and 1. I didn’t have enough buttercream 2. The buttercream did stick to the mold Would you recommend greasing it? Or possibly freezing the cake with the mold on it?

You do need enough buttercream on the outside so the mat can push into it. Did you use a crusting buttercream? If so, I recommend a technique in the video of icing the cake, refrigerating it, taking it out of the fridge to let the buttercream soften, then using the impression mat. I found that when I do it that way, it doesn't stick to the icing!

A few different ways... I use a little bit of: water (don't use too much or it will slide off) piping gel melted chocolate (don't use this method in hot weather) buttercream

Yes, I refrigerate my cakes, I never freeze them once they are filled and iced. (Unless I have to save it for a later date, I have another video on that.) But for this technique, I refrigerate. :)

I've never actually worked with Swiss Meringue buttercream, so I'm not sure how that would work since that buttercream doesn't crust like mine does. Since it doesn't crust, the buttercream may stick to the mat.
