He and some of his family made it out literally buried inside a truck load of rugs for export, and temporarily lived in Pakistan until they got refugee status to come to the US. @@telebubba5527 Many of the Soldiers of Alexander the Great's army stayed in Afghanistan, and are now known as the Nuristani Ethnic group. Many have blue eyes, red/brown hair, and some look like living statues. But it's more just job opportunity - many of us who came to the US started whatever jobs we could - Taxis, Ubers, selling hot dogs on the street, coffee, gyros, pizza shops, etc. Probably half the pizza shops and 80% of the "Mediterranean" places in my town are run by fellow Afghans.

I was really surprised how exotic the Afghani food was to the tasters. I figured it would be very similar or familiar, since the Tribal Areas (Khyber Pakhtunkhwa) of Pakistan are mostly Pashtun, and Pashtunistan (Pashtun homeland) goes right across the border between Afghanistan and Pakistan. Also, there are many Afghanis in Pakistan, especially in the tribal areas! So I'm surprised that there is so much regional variation in Pashtun cuisine! But I suppose that is the case in some parts of the world, where there are many local dishes. I don't mean to suggest that everyone in the region is Pashtun. Far from it. But the majority is Pashtun, so I expect their culture and food is familiar to most who live there. I don't know much about what distinguishes Afghani and Pakistani cuisine. I'd like to know more. It's very interesting to see how cuisine of neighboring countries and regions are similar, yet different. Even specifically within the region of Pashtunistan, I imagine that different influences on each side of Pashtunistan contribute to different local tastes and dishes. There is so much history and much interaction between cultures and ethnicities. It's complex and mysterious to a common foreign observer like myself!

I can't believe this? My favorite dish that I have tried making several times since I left Afghanistan at Bagram Airfield outside Kabul and haven't gotten right as far as flavor when I close my eyes. My friends who helped us at Bagram, Haroon and Malik used to bring me Kabuli when I went to escort them on base. They would bring the Kabuli with Kabobs and Season flat bread. I wish I could see them again and know how they are but that was is 2009-10. One of them hit me with a snowball when it, "surprisingly to me snowed" and it actually knocked me back and I hit the corner of a smoke shak grill and cut me behind my ear and it turned green and got pretty infected. And since I have a legit disability from Iraq, I can now officially, "jokingly" say that I was wounded in Afghanistan too. I would love to have this authentic dish properly made just one more time one day as I have dreamed about the flavor of this dish I was spoiled with frequently, and to anyone who hasn't had it made by a local in Afghanistan, please believe me when I say it is freaking, dang on, good!! And I haven't met a Afghanistan local who wasn't cool as a cucumber. oh and none of the youtube recipes get the flavor right, ive tried many of them.
