@@DogSpeak They probably do, but I've noticed in the past couple of decades, as countries have become more multicultural, that even those raised in the country of origin have started using the national prefix for food that they're very familiar with. In the UK/Britain they have old classics like a sunday roast, a full english/scottish breakfast, bangers and mash, and pork pies that they refer to as "British food", the Japanese have a word for their traditional food "Washoku" (和食) that literally means "Japanese food" that they use to refer to things they know are exclusively Japanese in origin, soul food and southern bbq in the USA is definitely "(US) American food" for even citizens in the USA. Hell we even have things we refer to as "Australian food" down here in Aus as a younger country, like barbequed seafood skewers, lamb chops done in our classic way, and fried crispy skin barramundi. So I wouldn't be surprised if in Mexico they have things that they'd still refer to as "Mexican food"

You can tell the gentlemen that there are dozens and dozens of different styles of mole in Mexico, from all different regions. The one they're eating is the most popular and is called mole poblano because it's from the city of Puebla, which is also famous for those traditional-looking blue and white clay tiles.

Similar to curry, mole can take on many forms, depending on the spice/ingredient mix. I hope you all get to try other varieties of mole in the future! I grew up eating mole, rice and tortillas. It's no wonder I quickly fell in love with food from Pakistan, India, and Afghanistan. Thank you for sharing!

Mole is my favorite sauce for my enchiladas. It can be used on many types of foods. Best thing is to wash it down with a margarita.

Oh man, this is a really new taste for them I bet. Mole is really hard to make from scratch but our Mexican groceries here in the US carry perfectly serviceable pre-made mole. Try it if you’ve never had it!

My first introduction to mole was when I was a teenager, my friends family had a family recipe for enchiladas they used on holidays. I'll never forget the smell of that massive stock pot of bubbling home made enchilada sauce as they stirred in pounds of chocolate (they made hundreds of enchiladas so it was A LOT of sauce).

@@WetbackNoSetback lmao. Yeah I'd say I see Mole chicken a lot more than I've ever seen a Mole burrito (even in California where burritos are king). I love lengua in mole but doesn't seem to be a very common thing. I don't know why its such a good combination with that soft tongue meat.

When I worked in Austin, Texas, which is famous for its variety of foods, there was a food truck that would drive around every morning in our business area that had a variety of breakfast burritos made fresh that morning. The mole was one of my favorites

You can also take the meat off the bone, roll up the chicken meat in a soft flour tortilla (very much like Roti) and put the Mole sauce on it. It is also eaten with a few slices of avacado and raw onion. But it is good with rice, too.

Lots of cumin in both Mexican and Indian food. Cinnamon, too. I feel like the major flavor differences are in the use of cacao in Mexico versus Coriander in India.

I know she had about 30 ingredients in her mole but mostly it was Chile about 4 different kinds, almonds, sesame seeds, bread, plantains tomatoes, tomatillo, peppercorns, garlic, onions all fried of course and Mexican chocolate. I may even remember a spoon of peanut butter or peanuts. Is this the same stuff?

@@onlymebaby.9249 It doesn't sound similar. Mom's version didn't have nuts or seeds or most of what you listed. It was a smooth sauce and I know there was always a couple of bay leaves in there. If you like Thai peanut sauce you'd probably love peanut butter mole. I've actually never tried the chocolate version.

I make authentic mole. There are so many kinds. There can be anywhere from 20-100, yes, 100, ingredients. That is why the flavor is so complex!!

I love this cocoa flavor Mole! Fortunately I have found the bottled concentrate in American grocery stores. Just add water lime salt spicy chilies to your preference add chicken and you’re good to go! My wife doesn’t like it! But I adore it! I serve it with Mexican rice pickled jalapeños and warm tortillas. The history of this particular Mole is very interesting!

You could try buying mole paste sold in small glass jars at any supermarket where ethnic food is sold. My favorite brand is La Costeña but another popular brand is Mole Doña Maria. All you do is mix it with chicken broth and stir continuously until you reach the desired consistency. To speed things up just get a rotisserie chicken and either shred it or add the pieces to the mole sauce. I like my mole a bit sweet so I add a little sweetener. All you need is rice, beans and corn or flour tortillas and you got a Mexican meal. No need to go to a Mexican restaurant for mole. Greetings from west Texas 🌞🌻🌵

Mole sauce is complex, and as individual as the maker. Well done to the chef for making this! You can adjust the amount of chili in the Mole sauce to make it more or less spicy, as you prefer. Im glad the the gentlemen got to try this.

Mexican food is so diverse that that Mole is only one type from one state, were my dad come from (state of Torreon), its done in a stew with pulled chicken and where I was born in the state of Cahuilla it done in a stew of lamb pieces.

There is restaurant chain (small) that specializes in Mole. Something like 10 different Moles. Awesome food. The bonus is their Grasshopper Soup, a bit crunchy and spicy but really good.

Mole only uses a bit of chocolate, so it's not overwhelming. The main ingredients are mild dry chiles. People who aren't familiar mistakenly call it chocolate stew.🙄

I've never eaten Mole myself. At least as far as know and I've eaten food from all over the country. If you are looking for something surprising and delicious to eat, artichoke and oyster soup is one of my favorites. I've only found it in one place; Little Rock Arkansas. I used to go out of my way just to eat it there.

Mole, if you look at some of the recipes either online or Mexican cookbook are incredibly involved. Not difficult but complex. I’ve made most authentic Mexican recipes for my ex-Mex hubby but never mole.

I bought one of those jars with a Mexican name on it. It was horrible. It had set up hard, like it had been sitting in a warehouse somewhere for a couple of years. It was awful.
