It is awesome! However, until I ate there, I never even thought of eating the skin, it just never occurred to me to try. I couldn't get over how much Flavor the skins had, I was hooked immediately. If I want a quick dinner, I microwave a "baked potato". I steam some broccoli, grate some cheddar cheese. I cut a big russet potato (skin on!) in half lengthwise, microwave until cooked through, put one half on a plate skin side down, fluff with a fork, then put some butter, a bit of salt and pepper on it. I add a few chives or chopped green onion next. Then dump my chopped, cooked broccoli on top of that. Sprinkle a generous amount of cheese over it, nuke it just to melt cheese a bit, and eat with either sour cream or plain yogurt. Yum. Eat the potato skin....it has the most nutrients.
