People's tastes seem to vary from person to person and from country to country. Where many spices grow naturally, it would become common to use them & so perhaps people's tastes adjust to that. There are herbs here naturally, but few spices so just as others do in their countries, we maximize what we have most abundantly as they do.

@Esther Sparrow I don't understand Mustafa's language, but most of them speak Urdu - which is basically poetic Hindi. Their language makes them refrain from being rude outright, but I noticed the English translation is always direct and somewhat crude. In one case, the lady said "Who made this? I need to make a complaint." This was mistranslated to "Who made this? I need to go hunting". Probably a mixup with the words 'shikayat' (complaint) and 'shikar' (hunt).

This was exactly my reaction to eating sushi for the first time too. I thought it was terrible and couldn't understand the appeal. My dad told me that it's often an acquired taste and sometimes you need to find the right chef and right type of roll with the right sort of fillings that you like because not everyone is going to make it in a way you can enjoy. I didn't believe him until I gave it a few more tried and now I love it. Still not a fan of wasabi but sushi really can be hard to stomach at first for many people. Especially if you start off with raw fish versions and don't ease yourself into that.
