Here's a popular Trinidad street food that I love! I love to get this at a cafe named Nick's in Charlieville so I tried to recreate their bread and channa with cheese. Here's what you will need:
For the Hops Bread:
4 cups of AP flour
1 tsp salt
1/4 cup sugar
1 tbsp coconut oil
4 tbsp butter
1 tbsp yeast
3/4 cup water
2/3 cup milk
golden ray butter to brush on top
Let it rise in the oven at 180F for 20 minutes. Then, put it to bake at 375F for 15 minutes.
For the Channa Filling:
1 1/2 cups dry channa, chick peas or garbanzo beans, soaked in water, 1/2 tsp baking soda and baking powder overnight. - Boil until nice and tender in salt and 1 tsp baking soda

1/4 cup green seasoning
2 leaves of shadon beni or bandhania, chopped
1 tsp curry powder+1 tsp roasted ground geera+1/2 tsp ground black massala+ 1/2 ts turmeric powder
8-10 cloves of garlic, minced
1 hot pepper
1 onion, diced
oil
Trini Cheese (New Zealand Cheddar)
