Here I’m sharing my recipes for Trinidad and Tobago’s Kurma and Gulab Jamoon.
In Trinidad Kurma (the crunchy version) and Gulab Jamoon, also known as 'fat kurma' is a sweet fried dough coated with a sugar syrup that consists of Sugar, Water and Ginger. The syrup is poured on the fried dough and allowed to dry until it turns dusty white coating the fried dough, through crystallization.
KURMA:
2 1/2 Cups of All Purpose Flour
1/4 tin on Sweetened Condensed Milk
1/2 tbs Ground Cardamom/Elychee
1/2 tbs Cinnamon Powder
1/2 tbs Ground Nutmeg
1/2 tbs Finely Grated Ginger
3 tbs Cold Butter
1/2 tin on Evaporated Milk
GULAB JAMOON
2 1/2 Cups of All Purpose Flour
3/4 tin on Sweetened Condensed Milk
1/2 tbs Ground Cardamom/Elychee
1/2 tbs Cinnamon Powder
1/2 tbs Ground Nutmeg
1/2 tbs Finely Grated Ginger
3 tbs Cold Butter
1/2 tin on Evaporated Milk
1/4 cup Water
PAG/SUGAR COATING
1/2 cup Water
1 1/2 cups Granulated Sugar
1/2 - 1 tbs Grated Ginger
