Pepper Roti Recipe
Green Seasoning Mix:
Blend together 12 leaves shadon beni, 8 cloves garlic, 2 small onions and as much hot pepper as you like
Filling for Roti:
Ingredients:
3 lbs potato peeled and boiled
2 tbsp geera powder
2 tbsp salt
1 sweet (bell) pepper grated
1 large carrot grated
1 cup cheddar cheese grated
5 heaped tbsp green seasoning mix
Method:
1. Add geera powder, salt and green seasoning to boiled potatoes and mash together until it has a smooth texture
2. Mix in carrots, sweet peppers and cheese
Roti:
Ingredients:
2 kg all purpose flour
1 tbsp brown sugar
1 1/2 tbsp salt
5 tbsp baking powder
4 tbsp shortening softened
4 cups water
2 tbsp oil
8 tbsp softened butter
Method
1. Mix together flour, baking powder, brown sugar, salt,shortening, oil and water, knead to form a soft dough, cover and rest for 20 mins
2. Form smooth dough balls, cover and rest again for 10 mins
3. Roll out each dough ball into a circle, paste softened butter over dough and sprinkle with a little flour
4. Using a knife, make a single slit in the dough from the center to the edge and roll the dough into a cone (check video if unsure of method)
5. Cover dough and allow to rest for 10 mins
6. Roll out each dough ball on floured surface and paste a thin layer of the potato mixture onto it
7. Place on heated and oiled tawa, sprinkle a little more grated cheese and then cover with another rolled out roti
8. Crimp edges together
9. Oil the top of the roti and flip when the bottom is golden brown
10. Oil other side of roti
11. Remove from tawa when the other side is also golden brown
12. Cut into triangles and enjoy!
