The Ultimate Pepper Roti Recipe.

Chris, here's an alternate method, which I learned while cooking at weddings and Prayers in #Trinidad. Instead of the double layers of Paratha/roti, we would stuff the dough with the filling, pinch it closed and roll it out (exactly like you do when making Trini Dhalpuri), and the dough must be softer=knead with extra water . it takes some gentle rolling to get the hang of it, so watch out for some messy outcomes when you start, if that happens, just pinch it closed.
