My brother in law of from Trinidad and OMG he makes amazing food!!! I love love love when he cooks!!!!! He made a pot of this and I ate the majority of it to myself!!! I’m Canadian ( newfie) decent I love spicy foods and I swear I would love to go to Trinidad one day just to enjoy the foods and the culture , so beautuful.

I sometimes put dumplings and a little curry.also I always put a whole hot pepper cover it with fig leaf before putting the pot cover on.Well put together Natasha nice

I put my pig tail whole to boil and change water 3 TIMES at 15min each it cut so much easier without to much effort.🎺😊

I like your cooking ,But I also add some Angostura bitters .some dasheen leaves ( Taro Leaves) cloves and a lot of fresh coconut milk ,home grated .Normally I do it on the wood fire outside and cover it with banana leaves to simmer down .My neighbors always came over to partake and to take the recipe

Funny thing Natasha, I froze it, but I did not steam it, so when I cooked it, it had a tainted taste. I'll know for next time. I was so disappointed because they were two nice big ones and they cost me an arm and a leg.

This is not a Trinidadian oil down either. Most real Trinidadians cook oil down as the Grenadians do, who brought this dish to Trinidad and have Grenadian heritage, don't call this soupy mixture oil down. Learn the local tradition of how to cook this dish pleeeaaasssee!!!! Its made in layers,..and the final profuct is dry.....you are totally wrong from beginning to end. You are making some kind of indian soup
