I was introduced to this kind of food by a coworker from Guyana. My first experience was Curry Chicken, then Curry Goat, and then Oxtails. I also enjoy a good baingan bharta (roasted eggplant). I had heard about roti and after seeing what it was, it looked and is delicious. I like the seasonings of a good curry whether it is a red or a yellow curry, both are very delicious regardless of the meat used. I'm always looking to explore new tastes.

I think the reason for beating the roti is to allow the layers to open up .... if you look closely it really does have layers thats why we put butter and flour before we roll it , so wen it beeing cooked we beat it up to fluff up the layers

The street food in Trinidad is akin to indian roots like puri chole etc. Even mauritius street foods are almost like trinidad street foods. In mauritius, you see a guy with bicycle selling dholl purie around the street corners. Behind his biks is a small glass steel trunk which is a mini restaurant by itself. Your country is greattt....i wish i cud visit but due to the constraints of distance. best regards LBV PRASAD INDIA

my family makes a square parata instead, it's not "busted up" you get it whole and then peel the layers apart and eat with veg/meat. the outer layer is harder and crispy some people throw that away, the inner layers each is soft and almost transparent and loaded with butter/ghee. it tastes so good.
