What's the indication that it should be "6x^2 + 15x - 4x -10" and NOT ""6x^2 - 4x + 15x - 10"?

Actually in this case that will work. What we need is to have two pairs of terms such that if we factor out what is common in each pair we are left with a common binomial. In this case that will happen with both expressions you have.
