On the Peterson roll, doing a short sit out makes it stupid easy to reach the el elbow. Joel Bane has a video on it.

I would advise against sticking your arm out like in the first example. The Granby role doesn’t work very well. You should step your close foot up for the Peterson roll to keep them from running around your back.
