My analytics debugger looks completely different to yours and doesn't have the nice gui. Its simply text in the console. And there's not option to select it. I have to turn it on via a button on the bar

Hey! Which one doesn't appear? Did you manage to install the relevant Chrome extensions? There are two debuggers with similar name. Please check the one with Duck :) (Analytics Debugger chrome.google.com/webstore/detail/analytics-debugger/ilnpmccnfdjdjjikgkefkcegefikecdc)

I set up transaction tracking from your videos, but in most stores, I have duplicate transactions in GA4. What could be the problem?

Hard to say it remotely but you might have a legacy GA4 setup that's causing the duplication. Maybe an app, or a GA4 integration with the codes or GTM. Try to check your store's source code to see if you have multiple GTAG installed. I hope it was helpful. - Erman.
