Man I was so excited when you got my same cooking set up, great cook looked scrumptious especially that point. I wish I could get my hands on a prime at a prime price ;) i know you don't wrap especially on your stick burner but may be worth a try wrapping it in single layer of butcher paper after you get the bark that you want. It helps me retain some of the moisture and while you getting your tenderization on, at least for me on the kettle it does. Keep up the excellent videos my wife even watched with me this morning

It's pretty cool how he could just read the piece of meat he got and new when to pull it off, cooking it with the somewhat uneven sides. This man knows his brisket; that's for sure.

I did the HEB Prime Brisket for Mother's Day (along with their Prime RIbeye). HEB now has H-E-B Wagyu Brisket for $5.99 / LB! I REALLY wish I could post my pix of the incremental process - the final product looked and tasted AMAZING! Of course, the Slow 'n Sear on the Prime Ribeye was very good (no leftovers on the steak). There were also several other meats slow 'n seaared while the brisket rested for ~ 2 hours. Among them were wild hog sausage (Eddie Franco's - Rock Springs TX), seasoned thin chicket breasts, pork chops, and a Holmes Garlic sausage. Not as good as Franklin's brisket, but no one was disappointed...

Tough flat is for tacos, but that flat is just fine. Brisket flat in my area is $8.99lb. Packer briskets are $4.99 for “choice” I think the choice they say is that’s the only choice you have haha. I saw a comment about a smoke ring. Smoke ring doesn’t mean flavor. Just got the new slow n sear and I want to cook a packer brisket on it. I have a 18 wsm and a large bge so the kettle will be the brisket cooker. Cheers Mr. T-Roy!!!

That's awesome, Troy ! The Slow and Sear has been on my BBQ wish list for awhile now. I got a Weber Performer a couple of months ago and love it ! I'll probably be ordering two of them next month, one for me and one for my son's birthday coming up....I got him his first grill back in the spring, a Weber kettle grill, and getting him started off on the right foot making his own BBQ. Anyway, I kind of blew my BBQ budget all to pieces this month ordering a couple of briskets and some steaks from Lobel's (not that I'm complaining ! LOL). Also, thanks for trying out the Kingsford Long Burn for us as I've seen it in the stores and I've been curious about it. I've always stuck with the standard Kingsford Blue and have had great luck with it. I'll be giving that a try as well for my longer cooks. Cheers Troy !

Great cook Troy! The brisket look good and juicy... can't believe your coals lasted that long. When I use the original coals they burn for 7-8 hrs. I do have a bag of the long burning that I wanted to use on a long cook, such as a brisket that I just picked to up to cook next weekend on the Weber with the S 'N S... Thanks! Happy Motoring : )

Hey T-roy haven't commented in awhile haha just wanted to say you inspire me to learn how to cook/bbq so much. Been watching your videos for a good 2-3 years now. You seem like such a great guy man. I really love watching your video's and learning so much. I dont get to grill out much as i still live with family but.. my grandfather is a great cook and lives a few states away i always try to watch him grill when i can and learn what i can when im there! But seeing your videos always reminds of him and his talent. Just wanted to thank you for your hard work/time/dedication in your video's. Im planning on moving out in the next year or so and if you had time to answer my question it would be awesome. If not any other subscribers feel free to chime in! I have a slow n sear and a weber 22 inch kettle like the one used in the video. It's my first setup and I really enjoy it. It's easy to use, plus it's ver versatile, so you can cook a lot of different things and aren't just limited to a smoker. Added benefit of being pretty affordable, I'd recommend checking craigslist for a used weber kettle, there are plenty floating around. Hope this helps!

Daryl at Bad Beast BBQ did a comparison test with the long burning charcoal versus the Original blue bag Kingsford. His results were not dramatically different. The original burned almost as long as the Long Burning. His results confirmed my thoughts when I used the Long Burning stuff. I just didn't think it was that impressive. However, I did think your Brisket impressive.

Love your videos so much. Been buying so much of the seasonings you show in your videos. I'm from Los Angeles and you can't find decent seasonings or Rubs for meats. Keep making videos because you've been inspiring me to BBQ a lot more, especially in this pandemic.

Yep, every time I add charcoal to the SnS, one briquette always ends up in the water pan without fail! Lol! Really nice job with that brisket, brother Troy - the SnS sure can handle it. Oh and I love that green kettle! Smoke em if ya got em!

Adrenaline Barbecue Company I get Prime whole packers at Costco in Raleigh for $3.99/lb and CAB at Restaurant Depot for a low as $2.86/lb

Mark Garwatoski true but our Costco in Charlotte rarely has a whole packer. In Texas there are literally cases of them in every store and they r all cheap.

You should try Germany. Prime grade brisket easily sells at 12-13$ (25€/kg)...and depending on the cattle it should at least be Prime grade, if it's German beef, as it's usually quite a bit leaner than US- or South American beef.

I'm glad you enjoyed the video Sean. They just came out with an updated model of the Slow 'n Sear where you can take out the water pan section and have more space for the charcoal. It's a great accessory for the Kettle! Thanks for watching brother! Cheers!!!

hey thanks for the great brisket how to and the slow and sear with the drip pan .. I am still searching for the smoking/grill I want, but getting pretty close to choosing between WSM 22 or the weber kettle 26.75. also I looked and like your WSM modification, I also recommend a guy (phil in florence) on his modification to his WSM, between the both of you is why its been hard to decide on which one to buy....anyway thanks again for teaching me and all of us how to smoke/grill, have a beer and enjoy family friends and fun, as we say in Georgia smoke on dawg (dog)

I stand corrected. Costco in Southlake is selling for $3.99lb right now. I asked the butcher is the price was going back down anytime soon and he said that they would drop the price in the winter sometime.

Were the briquettes still burning from the original load you put it? No addition? Like that slow and sear, need to look into that. And the brisket looked fantastic! Love my basic 22" Weber kettle, so versatile, and this proves that even more so.

Need to do a brisket. Have seen so many videos. Extremely rare to find it here in seden though - and last time it was close to $10 per pound - so no bargain. But still would be nice :)

Nice Video as always T-Roy ... I did a brisket in Weber Kettle with S-N-S and it turned out great also... in fact it was one of those Prime's from HEB... I am totally impressed with this cut of meat. The standard packer costs about $1.96 /lb. I was wondering why you decided to cook with the fat side down? In other cooks you usually cook with the fat side up. Have you ever cooked 2 briskets fat-up / fat-down to test and compare the quality of the meat after? I had difficulty controlling my temp though, I was having to deal with the air vents... the temp was flying from 220 to 300. I thought that it popping up so high was going to be a problem, but when I cut into the meat it was juicy and tender. Took about 12 hrs like yours. I only use kosher salt and course grind pepper on mine... - Thanks again for a great video. .. I am in Hutto and believe I can smell your Q cookin' ;-)

My family always wanted me to cut up the brisket after 20 mins of resting. I always insisted it had to rest longer. I don't think I ever successfully rested it the full two hours!

Hey T-Roy! Since you have both a Weber kettle and a PBC I wanted to get your insight on what you would do in my situation. I just bought a Weber 26” kettle and I’m back and forth between getting the Slow N Sear vs a PBC. My main thing is I’m concerned about ribs and the ability to hang them vs not. I’m not sure how many racks I could do on the 26 without using a rib rack (which seems kind of annoying). Whereas the PBC has the benefit of hanging them. I’ve also read and watched videos of people saying the PBC gives a different flavor profile. What are your thoughts?

have you heard about the Weber briquettes? did you ever get a chance to use them? at $20 a pop, it would be hard to just get a bag to just use away. But the pictures i've seen they are bigger and some say they last longer. I didnt get to my local target quick enough to get the clearance sale on them.

I've been burned out on BBQ lately (been craving Lobster, Crab, & Scallops! Not good for flat land locked Lubbock) but Boy oh boy did that Bark look awesome! It was so juicy Man o Man! already got bigcountrybarbecue.com pulled up on my 2nd monitor. 1 question is the Acai Pomegranate spritz you use is it just out of a bottle (like Vitaminwater) of did you mix it yourself?? Sounds interesting!! Great Video as always!

OK so this is a question from the UK - how many people in America have their own pools? How successful do you have to be to have one, or not? Does it vary by state? Only millionaires in the UK have them so I'm always surprised to see so many pools in 'murica!

Bought a packer prime this weekend from Sam's Club in Amarillo, Texas for $2.49/lbs. same price as select grade, go figure.

How much are those two items? How many rolls of foil can you buy with that much? Just wondering how long is the return on the investment.

I live in the Los Angeles suburbs and was told by the manager of the meat dept at Costco that most of the brisket Costco gets is sent to Texas and the rest of the South. When I complained that some of us in So Cal, too, like to smoke brisket, whole packers started to show up! I can get a 14 pounder for approximately $47 to $50 bucks but well worth the price. I was also told that So Cal get the lion's share of Tri Tip - a good cut of beef as well. Happy smoking from California!

Joe Melendez I grew up in NC, then spent 13yrs in TX, and moved to CO 7 years ago where I first had a tri-tip which is now a favorite... On a recent trip back to Charlotte I asked a butcher for tri-tip so I could cook for the family and his response was.... Go visit California if you want one of those!

TB, sad to hear our smoking brothers can't get tri-tip in the East. Years ago, I was at the World Chili Championship in Omaha, NE, and met a pit master from NC. We learned a few tricks from each other, very nice man.
