Man I was so excited when you got my same cooking set up, great cook looked scrumptious especially that point. I wish I could get my hands on a prime at a prime price ;) i know you don't wrap especially on your stick burner but may be worth a try wrapping it in single layer of butcher paper after you get the bark that you want. It helps me retain some of the moisture and while you getting your tenderization on, at least for me on the kettle it does. Keep up the excellent videos my wife even watched with me this morning

I did the HEB Prime Brisket for Mother's Day (along with their Prime RIbeye). HEB now has H-E-B Wagyu Brisket for $5.99 / LB! I REALLY wish I could post my pix of the incremental process - the final product looked and tasted AMAZING! Of course, the Slow 'n Sear on the Prime Ribeye was very good (no leftovers on the steak). There were also several other meats slow 'n seaared while the brisket rested for ~ 2 hours. Among them were wild hog sausage (Eddie Franco's - Rock Springs TX), seasoned thin chicket breasts, pork chops, and a Holmes Garlic sausage. Not as good as Franklin's brisket, but no one was disappointed...

Tough flat is for tacos, but that flat is just fine. Brisket flat in my area is $8.99lb. Packer briskets are $4.99 for “choice” I think the choice they say is that’s the only choice you have haha. I saw a comment about a smoke ring. Smoke ring doesn’t mean flavor. Just got the new slow n sear and I want to cook a packer brisket on it. I have a 18 wsm and a large bge so the kettle will be the brisket cooker. Cheers Mr. T-Roy!!!

That's awesome, Troy ! The Slow and Sear has been on my BBQ wish list for awhile now. I got a Weber Performer a couple of months ago and love it ! I'll probably be ordering two of them next month, one for me and one for my son's birthday coming up....I got him his first grill back in the spring, a Weber kettle grill, and getting him started off on the right foot making his own BBQ. Anyway, I kind of blew my BBQ budget all to pieces this month ordering a couple of briskets and some steaks from Lobel's (not that I'm complaining ! LOL). Also, thanks for trying out the Kingsford Long Burn for us as I've seen it in the stores and I've been curious about it. I've always stuck with the standard Kingsford Blue and have had great luck with it. I'll be giving that a try as well for my longer cooks. Cheers Troy !

Great cook Troy! The brisket look good and juicy... can't believe your coals lasted that long. When I use the original coals they burn for 7-8 hrs. I do have a bag of the long burning that I wanted to use on a long cook, such as a brisket that I just picked to up to cook next weekend on the Weber with the S 'N S... Thanks! Happy Motoring : )

I have a slow n sear and a weber 22 inch kettle like the one used in the video. It's my first setup and I really enjoy it. It's easy to use, plus it's ver versatile, so you can cook a lot of different things and aren't just limited to a smoker. Added benefit of being pretty affordable, I'd recommend checking craigslist for a used weber kettle, there are plenty floating around. Hope this helps!

Daryl at Bad Beast BBQ did a comparison test with the long burning charcoal versus the Original blue bag Kingsford. His results were not dramatically different. The original burned almost as long as the Long Burning. His results confirmed my thoughts when I used the Long Burning stuff. I just didn't think it was that impressive. However, I did think your Brisket impressive.

You should try Germany. Prime grade brisket easily sells at 12-13$ (25€/kg)...and depending on the cattle it should at least be Prime grade, if it's German beef, as it's usually quite a bit leaner than US- or South American beef.

I am still searching for the smoking/grill I want, but getting pretty close to choosing between WSM 22 or the weber kettle 26.75. also I looked and like your WSM modification, I also recommend a guy (phil in florence) on his modification to his WSM, between the both of you is why its been hard to decide on which one to buy....anyway thanks again for teaching me and all of us how to smoke/grill, have a beer and enjoy family friends and fun, as we say in Georgia smoke on dawg (dog)

Nice Video as always T-Roy ... I did a brisket in Weber Kettle with S-N-S and it turned out great also... in fact it was one of those Prime's from HEB... I am totally impressed with this cut of meat. The standard packer costs about $1.96 /lb. I was wondering why you decided to cook with the fat side down? In other cooks you usually cook with the fat side up. Have you ever cooked 2 briskets fat-up / fat-down to test and compare the quality of the meat after? I had difficulty controlling my temp though, I was having to deal with the air vents... the temp was flying from 220 to 300. I thought that it popping up so high was going to be a problem, but when I cut into the meat it was juicy and tender. Took about 12 hrs like yours. I only use kosher salt and course grind pepper on mine... - Thanks again for a great video. .. I am in Hutto and believe I can smell your Q cookin' ;-)

Hey T-Roy! Since you have both a Weber kettle and a PBC I wanted to get your insight on what you would do in my situation. I just bought a Weber 26” kettle and I’m back and forth between getting the Slow N Sear vs a PBC. My main thing is I’m concerned about ribs and the ability to hang them vs not. I’m not sure how many racks I could do on the 26 without using a rib rack (which seems kind of annoying). Whereas the PBC has the benefit of hanging them. I’ve also read and watched videos of people saying the PBC gives a different flavor profile. What are your thoughts?

have you heard about the Weber briquettes? did you ever get a chance to use them? at $20 a pop, it would be hard to just get a bag to just use away. I live in the Los Angeles suburbs and was told by the manager of the meat dept at Costco that most of the brisket Costco gets is sent to Texas and the rest of the South. When I complained that some of us in So Cal, too, like to smoke brisket, whole packers started to show up! I can get a 14 pounder for approximately $47 to $50 bucks but well worth the price. I was also told that So Cal get the lion's share of Tri Tip - a good cut of beef as well. Happy smoking from California!

On a recent trip back to Charlotte I asked a butcher for tri-tip so I could cook for the family and his response was.... Go visit California if you want one of those!
