Years ago two friends invited me to lunch. We went to a Vietnamese restaurant as one woman was from Vietnam. The food ordered came wrapped in Lettuce Leaf and it was superb! I've always wanted to do that at home but wasn't sure of the stuffing - didn't want any old thing. This surely isn't any ol' meat stuffing! Superb! You could indeed go mediterranean with this dish but it actually looks a lot like a dish in Vietnamese cuisine! Maybe with other meat, but this would combine great with a tangy and sweet fish sauce dipping sauce. I love it!

Sort of mixture between a hotdog and a salad. Crunchy salad, tangy onion and of course the sausage. Its an odd combination but are new tasty options not always a bit odd?

I love this guy. But it staggering how much he cross contaminates. He has raw meat all over his cutting board, his hands, and he's grabbing spice jars, a pepper mill, etc. He's smearing bacteria with a leaf blower.

Are you noticing the recipe? This is a Lamb and Pork "Sausage" and a spicy hot Italian sausage, too. The pickled onions are also strong. Plus there is a large Mint leaf in the wrap. When bitten, the Mint leaf will be chewed and combined with the other distinct flavors. There is Lamb within this recipe. It's not straight Lamb that requires a jelly or dipping sauce. This doesn't mean a dipping sauce cannot be had.

You can see the amount of pickle juices at the bottom of the smaller "jar". By putting the pickles first into a different receptacle, the pickles are allowed to drain first. This allows the lettuce wraps to not be waterlogged with pickle juices.
