Jacques Pépin's recipe for mint and cold cucumber soup is a refreshing summertime dish. Jacques pulls most of these ingredients straight from his garden. Heat will depend on individual tastes and there is plenty of room to experiment with this one.
What you'll need:
1 cup mint leaves, 2 - 3 cloves of garlic, 1/2 - 1 whole jalapeno pepper, 2 1/2 lbs cucumbers, salt, 1 cup Greek yogurt, 2 tbsp olive oil, tabasco (optional), dash of sugar (optional). Garnish with mint.

Cold cucumber, cold squash, and cold zucchini soups - all good. One could even think about cold pumpkin and gourd soup as well.

One might even wonder about lettuce, celery, celeriac, (fennel), cabbage, kale, tree kale, collard, tree collard, brussel sprout, broccoli, broccolini, cauliflower soups - all yum in the hot times. Don't forget the root vegs - carrot, salsify, beet, mangel, turnip, rutabaga (swede), jicama, potato, sweet potato, and yam root soups. Back to nature. Back to healthy eating.

I love how every food snob says you need to use a super expensive VitaMix blender and here is the greatest living Chef creating a masterpiece with an out of production Braun blender. I love him so much.

Old Braun stuff is particularly good in my experience. Their newer immersion blenders are good too. That said, I got a vitamix last year and I love it! I love how simple, robust, and easy to repair (if necessary) they are.

it's incredible to me that Jacques Pépin, known for being a world class chef, ultimately finds enjoyment in a dish as simple as cucumber soup. there is both beauty and a lesson in that

When I grew up there were 3 TV stations and PBS. From kindergarten I watched sesame street and then the Galloping Gourmet then Julia Child and that is where I was introduced to Jacques. I'm 60 now and about to retire as a chef. I will forever be grateful for PBS and my Jacques Pépin the teacher who taught me many things including how to create meals for all of my guests. Thank you!

Love this treasure of a chief, so humble. I never get tiered of watching him. I watched him as a teen with my mother when Julia had her show. What fun they were to watch having fun cooking ❤️ 😊

I make this often and it’s everything he says. I also can substitute cantaloupe for cucumber and serve for desert. Other melons work too.

The authentic cold cucumber soup is from the east mediterranean, and goes by many names. In Bulgaria they call it "Tarator". There are dozens of greek and Turkish variations of the same thing. I think most of them use dill and not mint, Usually no water (as cucumbers are watery enough) and you use strong lamb yogurt. One thing - we never do it in the electric blender of food processor - always hand grit the cucumber, and so you have "something to byte" in your mouth-fulls of soup. We also cool it long time in the fridge before serving - it is really marvelous when it's very hot outside. Very refreshing.

In Yemen, we eat this soup everyday during the fasting month of Ramadan. We add this soup onto layers of crepes. Thanks for the video!

Looks delicious! You could use dill as well, but I do like the idea of fresh mint. Especially if you have it in your garden. I’ll be experimenting with this this summer. 💕

This is so much easier than the version I have that requires me to cook my cucumbers in chicken stock before chilling and adding yogurt and dill. I’m tossing that recipe of 40 years for this one!!!

I'll try this. A southern tradition is thinly sliced cucumbers, salt and peppered but pepper 2 to 1 over the salt and just vinegar poured over them .

I will try tis method next time with the butter milk I will add a little of the halopenos, tabasco, as well. I have always diced my cucs but I have a smoothy maker, I have made broccoli soup with it, and that turned out very good, but try making it next time with the butter milk it is somewhat simpler with less ingredients i only add green onions, but this one looks good as well.

With the cucumbers and mint coming out of Jack's garden, it's gonna taste much better than ours. Ingredients make a huge difference!! Cold soups are underappreciated - a good idea for the summer. But some people have an aversion to the idea of cold soup.

I never heard of such a thing as cucumber soup. No! With yogurt? No! Try cucumber(as it is) with miso, gochujang, garlic, and sesame oil dip. I never heard of such a thing as blending a cucumber. But then, I am not Pepin and never had a French dish. Well, bon apetit!

Jacque is wonderful. I love these. Working in some Restaurants, I learned to leave a few strips of the green skin on a cucumber. It gives it a slightly acidic flavor. With Salt and Pepper that's delicious.
