Assamese food is really nice. I visited in 2023 but could not have even a single 'Assamese' meal because I went with a group of people who were obsessed with having 'only' Bengali food... and I was furious! 😅 In my opinion... such people shouldn't travel. They could do the same thing sitting in their homes while watching National Geographic - why travel all the way to Assam and stick to Bengali food?!

The point is, if you are travelling to a place for a week and not eating local cuisine and eating home-food all along; you rather stay at home itself. P.S. The food made in the homes in Bengal is neither too spicy, nor made with a lot of oil. 😅 You probably don't know about it and always had it in restaurants or special occasions. That's not the 'regular food' we eat on a daily basis.

Aahh, let me help the non native people out with certain verbatim. Jalpan : So Jal is Paani and Pan is having or receiving. Each time someone visits our home we tend to offer them a glass of water, the rituals draw back to the situation where we offer something to have if someone visit our place. The equivalent of “Chai Paani” Naam Ghor : Ghar is a place, where typically naam and kirtan happens. So its a religious institutions affiliated with neo vaishnavism Masor Tenga : Maas is fish, Tenga is Sour, so any fish curry which key ingredient is Sour is called Masor Tenga. It can be lime, elephant apple, tomato etc etc Khar: it’s an alkaline solution, tend to neutralise the acid in the stomach. Now its vegan and plant based, mostly extracted juices of burnt bana leaves. Similar to how vanila is extracted? It just replace vodka with water. Bahor Gaaj : Its the inner layer of the bamboo shoot, typically the newer culms. Certain things to look in consideration, Assam is divided into 4 regions Brahmaputra Valley, Badak Valley, BTAD, and Karbi Anglong Autonomous Council. Each division is indifferent to each other, different customs, eating habits, languages and dialects and it is an adaption of nearby demographic. Nagaon is in Middle of Assam, has influence of both Upper and Lower Assam. Division wise Lower Assam is mostly connected with West Bengal boarder while Upper Assam is with Arunachal. As we tend to expand from middle, the custom changes accordingly. So while the authentic Assamese cuisine has different meaning for each community and family in Assam, more over the representation is apt and yeah can be considered a stereotypical thali.

Gamosa has many types(basically 9 types)..The one we use to wipe our hands is called Pani(also means hand in Assamese) gamosa,the one we give to our guest n relatives as a token of love and respect (mostly in Bihu festival )called Bihuwan,Uka Gamosa(without the red flowers),Phulam Gamosa(with the big red flowers),Tiyoni Gamosa(we use this one as a towel to wipe off the water after bathing),Anakota Gamosa(the Gamosa is not cut with any mechanical tools like scissors or blades or machine),Gukhai Gamusa(the one we offer to our God),Jor Gamosa(idk about the use of this one)and Xadharon Gamosa(for general use).

I want to add 1. Duck’s meat are eaten all over Assam, not only in upper Assam. 2. Fish curry is not only familiar to Bengal but also in Assamese families. There are many family who eat different kinds of fish in their daily meals. But the curry is less spicy in Assamese dishes than Bengali.

Sorry but they are not able to well explain about GAMUSA. When we entered NAMGHAR we use to wear it, for elder's respect we use it in our festival. Some people use it like towel that's diff thing but GAMUSA is all about respect❤ but i feel this video love it.
