The one you said as adobo is called humba , a recipe of the Visayans. The regular adobo does not have sugar in it. It’s only soy sauce, vinegar and garlic. You can add bay leaf but some people don’t like the smell .

Bopis - it's like adobo using chopped up pork lungs, bell peppers and some birds eye chili. Nilaga (nilagang baboy) - literally means boiled pork; with bokchoy, cabbage, potatoes, leeks, salt and pepper. Simple but a hearty soup. ** Dinuguan - it's like pork adobo without soy sauce, meat is sliced bite size with pork innards and pork blood is added at the end of the cooking.

Hidden tip: Some carinderias allows you to buy a half-order of a dish (servings are big enough to eat 2 rice servings). You can also ask for a sauce in your rice for any dishes that have any sauces in it and also ask for a nilaga soup only for free. Ask the owner though if it's allowed but mostly it's allowed. Also, vegetable dishes are usually cheaper than meat dishes so if you are on a budget, veggie dishes is your go to.

Carinderia in English is called Canteen... it's a Spanish word... just like a High School canteen in the US... you can choose ready-to-eat food like a buffet... sometimes we call Carinderia in Filipino "Turo-turo" which means Point-point... you point to the food that you want to eat... "Turo-turo"...

the best way to eat authentic Filipino food is to eat the one that is serve in a Filipino household. Karinderia is close enough but since it was meant for business, some ingredients are removed so they can sell it cheap.

Technically, a "karinderya" is an informal restaurant that serves home-style cooked dishes. Informal because they start out like they just sprouted from nowhere, usually set up at some part of the house and they just start to do business without permits yet, until told to secure one.

😂😂😂 the leathery in beef nilaga is one of favs of local I forgot what it is called if I'm not mistaken it's tendons but it's cooked like that becoz if the cooked try to tenderize it so much like the beef the beef in nilaga will be like mushy which is not good I think if it's cooked like stew and in my personal opinion I kinda like it kinda like chewing gum becoz I can eat more rice while savoring it's flavor along with the soup😁😁😁

"Carenderia" came about during the British occupation of Manila when they brought in Indian servants and their families. The Indians opened eateries that served curry, which was then christened "carenderia" which means "a store that sells curry". "Kare-kare" also comes from the Indians hawking their curry to the locals, like "curry, curry" which the Filipinos mistook for "kare-kare" and developed their own version.

ALSO FILIPINOS DID NOT MISTOOK KARE-KARE AS CURRY-CURRY, infact it was the opposite, CURRY IS A WHITEWASH TERM OF KARI, Which is a Sanskrit word that originated in India and is widely used in South East Asia literaly means to cook with sauce. ALSO THE REASON WHY ITS CALLED CARENDERIA is due to The Kapampangans of long ago took great pride in their kari, allegedly setting up thatched huts on the roadside to serve the delicacy. These huts were referred to as kariyan, from which the karinderiya comes. As more Kapampangans ventured to Manila for business or studies, the kariyan followed them there, catering to a homesick clientele. Tagalog folk from across the Pasig wanted to get in on the action and established their own kari enterprises.

Best places is always the local small streetfood places and Carinderias where odinary ppl eat.. IF a place is dirty or cheating its pretty dead in 1-2 days and shut down by the locals. Always remeber. Every bite of a viand should be paired with rice to get the flavor that Filipinos enjoy. If you eat it without rice it will be very spicy, more sour, salty or gamy. They were made to be paired with rice.‼️

I can recommend Giligans or Kuya J restaurant to taste some unusual Filipino food as well as popular ones. I can't say that they elevated the dish but it's more delicious.

The grilled squid should be dipped in soy sauce,calamansi and chilli dipping sauce. It's always best with that combo dipping sauce.goes well with most of the Filipino grilled meats and seafood.

You are right the beef here is not so amazing. There are ranches on Luzon from what I understand and there are also foreigners trying to introduce more beef cattle to the country. So maybe in time they will be amazing!

A carinderia is a type of small eatery or food stall in the Philippines. Good you can order a split serving. If you order a full plate serving you can’t finish everything if you have several dishes . I’m missing Filipino dishes here.

Mark Wein came to eat there too way before. The adobo "sauce" is more appropriately called as sarsa than sabaw nor soap. whatever its called its delish anyhow. dry but garlicly adobo is also masarap slightly fried over mantika (fat oil)

You have to try the Ilonggo Style Adobo. It's packed with anatto, yellowish adobo. The smell is good and diffetent than other Adobos. You have to search for it. 😊

Filipino Dishes are always partnered with rice, because to lessen the saltiness, sourness and sweetness of of the dish. If it is bland , you have to have a sauce partner to it, you have to ask! like kare-kare. You have to know where the cooked good meat soup. Bulalo is for me!

Unfortunately we didnt get to try the grilled meat. We were too focused on the other dishes. Later after we were full I found out that the grilled liempo was a lot of peoples favorites.
