The coconuts get bitter the older they get. The jelly in the coconut you have has solidified. You need to try one that is fresh from the tree (nice green colour) and the jelly will be sweeter, and you let all the coconut water go to waste unfortunately (wouldn’t be as sweet though) but it’s still good
