Fun fact, in Norway, Gingerbread, is pepperkaker, literally pepper cookies. We, in addition to ginger and cinamon, have pepper in the recipe. Its allso made completly differnt than this. Its all warmed up in a pan (all the wet ingridienses), cooled down and the flour and spices are added.

Yummy! I LOVE hearing how things are done in other Countries!!! I’ve personally never even tasted gingerbread! It’s always something thats used as a decoration and sits on the table until it’s hard as stone and inedible! (For humans, that is) After, the gingerbread has served as holiday decor, as a house or little man hanging on a tree, I repurpose it! I bring it outside and carefully place it in the yard for birds, squirrels, and any other cold animal that may find joy in an edible shelter! It’s so much fun to watch squirrels take off a jellybean, go inside and have a snack while watching out the gingerbread window! (🥰 I know I’m a dork, but furry and feathered critters might beg to differ!) Anyway! Thank you for taking the time to share how it’s done in your little corner of the world!

I'm from northern Europe also and do the gingerbread dough the same way. But also a fun fact from our country: If you add just egg white to your icing sugar, it gives the same effect as the egg white powder and water, so you don't have to use the artifical stuff in your cooking. :)

Your mixer is fine that type of mixer doesn’t touch the sides all the time just scrape down the sides and keep mixing. Just relax when baking recipes are forgiving if it calls for extra large eggs and all you have are medium eggs it’s ok to use 2 eggs. When rolling out dough flour your board then put the dough down and also flour your rolling pin. Just put a little flour in your hand and rub down the pin.

Little tip for weighing out flour, put the sieve on the bowl, then set your scales to 0, then you can weigh out your flour. Hope you and Nick had a great Christmas xx

Little tip.. warm up a glass with just water. Place this over the piece of butter. Soft in half the time.

Love y’all!!! Your mixer works just right. That’s the way the mixing paddle is supposed to work. Think of a figure 8 that is turning in a circle. That’s the pattern the paddle travels in while mixing. Hope that explains things

As someone who took culinary for two years your mixer is fine. Get yourself a bench/bowl scraper and when the mixture is mostly on the sides or your paddle isn’t getting at it turn it off and scrape the sides. Hope this helps :)

If you use chocolate or candy melts to hold the sides together it works really well, and it takes a lot less time to harden.

I do like to bake and even made a gingerbread house today, and it doesn't really matter what size your egg is. I also have a tip: roll your dough from the center outwards in different directions😘 good luck baking and Merry Christmas!

Could NOT STOP LAUGHING with the spatula. I've done many a gingerbread house/icing and that's not a mistake, it's supposed to be that texture. It's likely called Royal Icing because it's a Royal pain :D You did a super job!! Funny, I was surprised there was no molasses but everyone uses a different recipe. If icing gets too thick, you can add a touch of water, or work the icing in the bag so you can warm it up and get it to thin out a bit. Best not to fill the bag that full for that reason--also, with a thick icing, your tip can get clogged because once that stuff hardens, it's like glue. Also, always let the icing set before decorating. It will become cement. Trust me, getting it off your counter top is a fun challenge :D

Merry Christmas. I make alot of gingerbread houses and I have found if the dough spreads in the oven take it out while its soft and recut with the cutter, that way all the pieces will fit together better. Plus I found melted chocolate sticks it together better and dries quicker.

The paddles don’t hit the sides on any mixer. It could cause the mixture to go off balance. You use a spatula to push down the food on the sides into the middle. You stop the mixer when you do that. 💕

I roll and cut on the baking paper so I can just remove the excess dough instead of moving the cut outs.

You can bung butter in the microwave for 30 second intervals until it is soft if you ever forget again. You can mix Flour as long as they are the same kind of flours ie all purpose flour with all purpose flour, cake flour with cake flour. Like with like. I believe if I remember correctly from culinary school. Just adding on. When they are smaller cookies you don't need to bake them as long. Also your lights for your set up might have been making your dough hot which could have made it harder to handle. You did a very very good job for a non professional. We can't all be Gemma's.
