After finishing the sharpening process and debur with last stone (let us say last diamond stone is F1500) how should I strop with leather or balsa strop with paste? Should I strop with higher grit pasta with convex adapter or without it?

If you want to strop a standard V-shaped edge you'll not need the convex adapter. Simply increase the angle by 0.2/0.3 degrees and use paste of the same gritness or higher.

Seems odd and over complicated that you need to have one hole for straight sharpening then need to move it 90° to do convex sharpening. The Hapstone gen 2 convexing attachment can go from straight to convexing with a thumb screw and adjusting the angle, no need to move the guide rod location.
