This video was worth the wait! I’m imagining that the slightly sticky kombusui coats the noodles well as they go into the chicken and duck soup. Do the noodles pick up as much soup when already covered in liquid like that?

I like to watch your videos before eating . Looks really good especially the attention to detail like washing the noodles after boiling it. A real art form - I hope I can do it once. Btw, could you explain why Alkaline water is used instead of tap water?

hi thank you for watching! By using alkaline water, you can bring the soup from acidic to neutral. neutral soups are more feel umami :)

Huge difference, i dont know the science behind alkaline water but it completely changes the texture of the noodles. I would not skip the alkaline step, its very important.

@@JustStarcraft2 I understand the part about the noodles as kansui is an alkaline but he uses the alkaline water in the soup as well which is confusing.

thank you for watching :) I used slightly alkaline mineral water. The reason for this is that when use regular water to make dashi, it becomes acidic. I used it to make the soup as close to neutral as possible :)

i believe it is to offset the “sour” taste that can occur from soaking katsuobushi for a long time.

I have been a fan of ramen of all types for many years. Unfortunately, many Australian Japanese restaurant take a lot of short cuts and sell an inferior product. I would love to have a go at making the real thing but many of the ingredient are not available to me here.
is using the root kombu necessary and do you have to specifically use hidaka kombu?

Not necessarily, though you will get different flavor due to the varying amounts of umami. Any good quality Japanese Kombu will work, they just all have different flavors that work better with certain soups.
