Hey Ian, the best Crappie I think ive ever had, we had fillets and cooked them on the grill in a fish grilling basket. Basted them with a mix of butter, worchestershire, and lemon while grilling. Can season with whatever you've got before grilling. Delicious!

A recipe I came up with this past year that I enjoyed as well as everyone else who tried it - you can use filets or just scaled but throw em down in your pan get a good quick sear on both sides then turn your heat down and throw in a ton of scallions or green onions with some coconut milk and a shot of good curry sauce. Let them simmer for a bit and serve over a bed of rice. Pro tip - if you don't use all of the coconut milk in the fish use what's left in the rice for another layer of flavor. I feel like you and your clan would enjoy this one. Happy new year brother 🤙🤙

I have fished for specks in central fl for 50 years. I still long line troll. Still the best most relaxing way to catch em. Went out a couple of days this month, nothing, nothing, then 6. They are just starting it jump up. One tip, after you remove them from the fryer, hit them with malaysian pink salt. Really brings out the flavor, but they have to be hot.

Interesting timing. About 30 minutes ago I created my crappie cakes to cook later this evening. I have a good crab cake recipe and I just swap crappie for crab. I bring a pot of water to a boil and then add about a half cup of Old Bay. I put a pound of fillets in the boiling water until they start falling apart. I pour the mixture in a strainer and with a wooden spoon, make sure all the fillets are in small bits. I then follow the recipe for crab cakes and it is sooo good. Remoulade sauce is my favorite for dipping. Give it a try sometime.

My dad and I used to fish for specks like that decades ago. We used cane poles and "minners", as he called them. I'd just as soon have speck fillets almost over flounder! And House Autry rules! Thanks for another good one!

In Texas, a lot of guides will take a bunch of XMAS trees out in January and create some structure in 10-20 ft of water. Crappie love to hang on brush piles. All I ever did was back hook minnows and drop the bait down just above the brush. We'd get boatloads doing that going through 6 dozen minnows.
