Not much of a difference in terms of the education. Universities have more comprehensive programs and research as they have more students and funding. Colleges are better at providing hands on work experience through coop and internship programs. I’ll do a video about low cost colleges in the future

Akki, I'm suppose to start a UK IT diploma call BCS ( British computer society) which is provided by the UK government. This diploma is equals to a UK bachelors honours degree about IT, computer science and software engineering. UK universities accept this diploma to a Masters degree about software engineering ( any subject related to IT and Computer science) and I have heard that this diploma (BCS) is recognised in Canada. You would have to direct your question to the university or the college directly (international admissions office) to check.

The easiest way to mitigate to Canada is to come as a student. However, it is expensive and you might have to explain your study gap due to age during the visa process. Otherwise you have to find a job offer with visa sponsorship. This is also difficult depending on your field and level of work experience. If you have work experience then you can try to apply for PR directly.
